%20I%20just%20simply%20handed%20the%20book%20over%20and%3C/p%3E%3Cp%3Etold%20him%20to%20flick%20it%20open%20to%20a%20recipe%20%E2%80%93%20and%20with%20a%20slight%20sigh%20of%20relief%20Thai%3C/p%3E%3Cp%3EPork%20with%20Coconut%20Coriander%20Sauce%20was%20read%20out!%20If%20you%20just%20noticed%20the%3C/p%3E%3Cp%3Edeliberate%20change%20from%20the%20title%20to%20the%20reference%20above%20then%20well%20done%20%E2%80%93%20we%20did%3C/p%3E%3Cp%3Eswitch%20the%20meat%20from%20Pork%20to%20Turkey,%20mainly%20as%20I%20had%20bought%20reduced%20some%20Turkey%3C/p%3E%3Cp%3Ebreast%20steaks,%20and%20as%20the%20recipe%20called%20originally%20for%20Pork%20Fillet%20which%20is%3C/p%3E%3Cp%3Eequally%20pretty%20lean%20it%20made%20an%20excellent%20and%20economical%20substitute!%3C/p%3E%3Cp%3ESo%20the%20book%20in%20question%20this%3C/p%3E%3Cp%3Emonth%20%E2%80%A6%20its%20Rachel%E2%80%99s%20Favourite%20Food%20at%20Home%20(by%20Rachel%20Allen),%20and%20the%20Thai%3C/p%3E%3Cp%3EPork%20is%20also%20the%20first%20recipe%20cooked%20from%20it.%20Dad%20gave%20me%20the%20book%20late%20last%3C/p%3E%3Cp%3Eyear%20after%20managing%20to%20source%20it%20for%20I%20think%20something%20like%20a%20measly%2099p%20brand%3C/p%3E%3Cp%3Enew%20in%20a%20clearance%20shop!%20I%20do%20like%20a%20bargain%20but%20really%20lack%20bookshelf%20space%3C/p%3E%3Cp%3Enow%20(in%20fact%20a%20boxful%20linger%20sadly%20in%20the%20loft%20softly%20calling%20at%20night..either%3C/p%3E%3Cp%3Ethat%20or%20we%E2%80%99ve%20got%20pigeons!)%20and%20now%20I%E2%80%99ve%20actually%20had%20a%20proper%20look%20through%20it%3C/p%3E%3Cp%3Ethere%20are%20some%20rather%20tasty%20looking%20recipes%20including%20some%20Fruity%20Breakfast%3C/p%3E%3Cp%3EMuffins%20that%20the%20page%20just%20opened%20on%20as%20I%20got%20the%20book%20out%20to%20type%20it%20up!%3C/p%3E%3Cp%3EThis%20also%20reminded%20me%20once%20again%20(and%20the%20second%20time%20that%20week%20oops)%20to%20READ%20A%20RECIPE%20FROM%20START%20TO%20FINISH%20as%20we%20completely%20cacked%20up%20the%20timings%3C/p%3E%3Cp%3Eand%20wasted%20precious%20time%20and%20energy%20making%20it!%20Dinner%20was%20finally%20served%20about%3C/p%3E%3Cp%3E9pm!%20I%20have%20written%20the%20recipe%20out%20to%20make%20it%20easier%20for%20those%20with%3C/p%3E%3Cp%3Esimilar%20brain%20programming%20to%20me!%3C/p%3E%3Cp%3EMany%20moons%20back%20I%20attended%3C/p%3E%3Cp%3Ethe%20local%20paper%20as%20South%20East%20Asian%20Cookery%20but%20I%20think%20Thai%20food%20was%20becoming%20popular%3C/p%3E%3Cp%3Eand%20there%20must%20have%20been%20requests%20made%20and%20it%20was%20changed%20to%20just%20Thai%20cookery.%3C/p%3E%3Cp%3ETo%20this%20day%20ashamedly%20I%20note%20that%20I%20have%20never%20looked%20up%20the%20difference!%20I%20am%3C/p%3E%3Cp%3Eno%20expert%20by%20any%20means%20on%20Thai%20cusine%20and%20not%20really%20sure%20how%20authentic%20this%20is%3C/p%3E%3Cp%3Eeither%20but%20it%20has%20all%20the%20elements%20of%20a%20Thai%20meal,%20and%20despite%20our%20attempts%20to%3C/p%3E%3Cp%3Eruin%20it%20piece%20by%20piece,%20it%20actually%20turned%20out%20pretty%20tasty%20and%20can%20see%20us%3C/p%3E%3Cp%3Edefinitely%20making%20again.%3C/p%3E%3Cp%3EThe%20original%20recipe%20serves%20a%3C/p%3E%3Cp%3Ewhopping%2010-12%20so%20I%20have%20scaled%20it%20down%20somewhat%20to%20suit%202-3%20adults.%20I%20also%3C/p%3E%3Cp%3Eopted%20for%20using%20GourmetGarden%E2%80%99s%20fresh%20herb%20and%20spice%3C/p%3E%3Cp%3Epastes%20as%20er%20its%20easier%20and%20I%20had%20them%20in!%20I%20left%20out%20the%20lemon%20zest%20as%20I%20er%3C/p%3E%3Cp%3Eforgot%20to%20buy%20one.%20I%E2%80%99ve%20never%20used%20lemon%20zest%20in%20Thai%20recipes%20before%20either%20so%3C/p%3E%3Cp%3Ewasn%E2%80%99t%20too%20concerned%20missing%20it%20out!%3C/p%3E%3Cp%3Eand%20stalks%20roughly%20chopped%3C/p%3E%3Cp%3ESome%20of%20the%20ingredients!Method:%3C/p%3E%3Cp%3EThis%20is%20the%20bit%20I%20we-wrote%20completely%20-%20there%20are%20two%20options%20for%20making%20the%20marinade%E2%80%93%3C/p%3E%3Cp%3Eoption%20one%20is%20if%20you%20have%20a%20liquidizer%20or%20similar%20gadget.%20Option%20two%20is%20if%20you%3C/p%3E%3Cp%3Eonly%20have%20a%20food%20processor%20(I%20don%E2%80%99t%20this%20is%20how%20book%20states%20it?!)%3C/p%3E%3Cp%3EOption%20one%20%E2%80%93%20whack%20all%20the%3C/p%3E%3Cp%3Emarinade%20ingredients%20together%20in%20a%20liquidizer%20till%20nicely%20combined,%20mix%20with%3C/p%3E%3Cp%3Ethe%20Turkey%3C/p%3E%3Cp%3Eand%20reserve%20for%20at%20least%2030%20minutes%20or%20overnight.%3C/p%3E%3Cp%3EOption%20two%20%E2%80%93%20In%20the%20food%3C/p%3E%3Cp%3Eprocessor%20add%20the%20coriander,%20spring%20onions,%20ginger,%20garlic,%20lemongrass,%20chilli%3C/p%3E%3Cp%3Eand%20lemon%20juice,%20blitz%20and%20combine%20with%20the%20remaining%20marinade%20ingredients%20mix%3C/p%3E%3Cp%3Ewith%20the%20Turkey%20and%20reserve%20for%20at%20least%2030%20minutes%20or%20overnight.%3C/p%3E%3Cp%3EMmm%20soo%20good!%3C/p%3E%3Cp%3E1)%20Heat%20a%20large%20frying%20pan%20until%20very%20hot%20(but%20not%20so%20hot%20the%20alarm%20goes%20ping%20ping%20ping)%20and%20lift%20the%20turkey%20bits%20out%20of%20the%20marinade%20(a%20slotted%20spoon%20in%20great%20here)%20and%20fry%20in%20a%20single%20layer%20for%20about%202%20minutes,%20turn%20over%20and%20cook%20through%20%E2%80%93%20should%20be%20at%20the%20most%203-4%20minutes%20and%20lovely%20and%20sticky%20and%20your%20kitchen%20smells%20fab.%20Keep%20warm%3C/p%3E%3Cp%3E2)%20Meanwhile%20place%20the%20leftover%20marinade%20in%20a%20small%20pan%20and%20bring%20to%20the%20boil%20uncovered,%20and%20boil%20until%20slightly%20thickened,%20then%20add%20the%20sauce%20ingredients.%20(We%20were%20a%20little%20impatient%20having%20mis-read%20original%20instructions%20and%20added%20cornflour%20shh!)%20%20It%20may%20well%20not%20need%20much%20seasoning%20%E2%80%93%20the%20soy%20and%20nam%20pla%20are%20quite%20salty%20on%20their%20own%20so%20do%20check%20first!%3C/p%3E%3Cp%3E3)%20Serve%20the%20cooked%20turkey%20on%20top%20of%20rice%20if%20desired%20and%20lather%20a%20little%20sauce%20over%20the%20top%20or%20on%20the%20side.%20We%20actually%20poured%20most%20of%20the%20sauce%20back%20over%20the%20turkey%20to%20warm%20through!%20It%20most%20likely%20lost%20some%20marks%20at%20this%20point%20in%20the%20looks%20department%20but%20it%20tasted%20great!%20As%20you%20can%20see%20we%20didn't%20have%20rice%20-%20I%20used%20up%20some%20leftover%20chapati's%20and%20made%20a%20dry%20sweet%20potato%20curry%20on%20the%20side.%20Garnish%20with%20a%20little%20extra%20corinader%20and%20spring%20onions%20to%20hide%20the%20dodgy%20colour%20if%20you%20like.%3C/p%3E%3Cp%3ENo%20stake%20in%20the%20beauty%20contest%20but%20wins%20on%20taste!%3C/p%3E%3Cp%3EAs%20I%20managed%20to%20make%20the%20recipe%20more%20economical%20by%20substituting%20Turkey%20breast%20for%20the%20Pork%20Fillet,%20and%20it%20was%20reduced%20to%20a%20purse%20friendly%20%C2%A31.78%20I%20am%20sending%20over%20this%20to%20Credit%20Crunch%20Munch%20set%20up%20by%20Fuss%20Free%20Flavours%20and%20held%20by%20Fab%20Food%204%20All%20this%20month:%3C/p%3E%3Cp%3EThe%20trio%20of%20tasty%20cheats!Disclaimer:%20Gourmet%20Garden%20provided%20me%20with%20the%20spice/%20herb%20pastes%20for%20my%20own%20review%20and%20I%20was%20under%20no%20obligation%20to%20feature%20on%20Anne%E2%80%99s%20Kitchen%3C/p%3E){kind=link}
