Now that Thanksgiving, Christmas and the Super Bowl food frenzies are over, I can better focus on sharing healthier recipes. My family (and that includes moi) enjoys a little comfort food, fried food, pizza, home baked desserts and breads-- but we don't eat like that every single day. Honest!
While I do have 47 cake recipes (and counting) listed on my Recipe Index, we don't always eat this way. I admit that I'm a bit guilty of enjoying the sharing of delectable desserts on my food blog, because who can't resist looking at food

%20enjoys%20a%20little%20comfort%20food,%20fried%20food,%20pizza,%20home%20baked%20desserts%20and%20breads--%20but%20we%20don't%20eat%20like%20that%20every%20single%20day.%20%20Honest!%3C/p%3E%3Cp%3EWhile%20I%20do%20have%2047%20cake%20recipes%20(and%20counting)%20listed%20on%20my%20%20Recipe%20Index,%20we%20don't%20always%20eat%20this%20way.%20I%20admit%20that%20I'm%20a%20bit%20guilty%20of%20enjoying%20the%20sharing%20of%20delectable%20desserts%20on%20my%20food%20blog,%20because%20who%20can't%20resist%20looking%20at%20food%3C/p%3E%3Cp%3Eporn?%20Is%20a%20package%20of%20wild%20caught%20Halibut%20as%20enticing%20as,%20say,%20a%20slice%20of%20chocolate%20cake--with%20marshmallow%20frosting%20in%20the%20middle,%20and%20a%20thick%20slathering%20of%20chocolate%20frosting?%20I%20think%20not.%3C/p%3E%3Cp%3EStill,%20I%20strive%20to%20make%20quick%20dinners%20with%20clean%20ingredients%20more%20often%20than%20not,%20and%20I%20hope%20you%20enjoy%20these%20types%20of%20recipes%20as%20well.%20%20%20Since%20I%20started%20my%20food%20blog,%20in%202008,%20I've%20become%20more%20aware%20of%20where%20my%20food%20comes%20from,%20and%20how%20it's%20processed.%20%20For%20most%20of%20my%20life,%20I%20thought%20I%20hated%20fish.%20%20Once%20I%20realized%20the%20difference%20between%20cheap%20fish%20(from%20unreliable%20sources%20and%20questionable%20fish%20farms)%20--%20or%20the%20difference%20between%20buying%20wild%20caught%20vs.%20farmed%20(some%20are%20good,%20some%20are%20not%20so%20good),%20I%20began%20to%20appreciate%20that%20good%20quality%20fish%20(though%20it%20costs%20more)%20taste%20so%20much%20better%20than%20bargain%20fish--%20and%20it's%20better%20for%20you.%3C/p%3E%3Cp%3EYou'd%20think%20I%20could%20buy%20fresh%20fish,%20locally,%20since%20I%20love%20on%20the%20Monterey%20Peninsula.%20%20It's%20not%20quite%20so%20easy.%20%20I'm%20sorry%20to%20say,%20that%20our%3C/p%3E%3Cp%3Ewharf%20has%20become%20more%20of%20a%20tourist%20destination%20than%20a%20place%20to%20buy%20the%3C/p%3E%3Cp%3Efresh%20catch%20of%20the%20day.%20Sadly,%20the%20fishmongers%20are%20pretty%20much%20gone,%20unless%20you%20want%20to%20buy%20a%20walkaway%20shrimp%20cocktail%20or%20calamari.%20%20The%20only%20other%20place%20I%20can%20find%20fresh,%20or%20frozen,%20%20fish%20is%20at%20my%20local%20Whole%20Foods.%20The%20prices%20are%20pretty%20steep,%20but%20I'm%20committed%20to%20buying%20the%20food%20that%20I%20feed%20to%20my%20family%20at%20reliable%20places.%3C/p%3E%3Cp%3EAccording%20to%20Seafood%20Watch%20Wild-Caught%20Alaskan%20Halibut%20gets%20the%20thumbs%20up.%20%20We%20love%20it,%20because%20it's%20a%20very%20mild%20fish.%20%20I%20love%20it%20Seared%20and%20Roasted,%20and%20I've%20prepared%20it%20with%20summer%20garden%20veggies.%20Delicious!%20I%20happened%20to%20have%20some%20frozen%20halibut%20that%20I%20thawed,%20and%20it%20was%20a%20work%20night.%20%20I%20figured%20I%20could%20get%20this%20recipe%20on%20the%20table%20in%20less%20than%2045%20minutes--%20and%20that's%20always%20a%20good%20thing.%3C/p%3E%3Cp%3EI%20try%20to%20keep%20a%20bag%20of%20fresh%20spinach,%20in%20our%20fridge,%20at%20all%20times.%20%20My%20favorite%20way%20to%20prepare%20spinach,%20is%20to%20wilt%20it%20with%20olive%20oil,%20in%20my%20beloved%20cast%20iron%20skillet,%20%20that%20I've%20infused%20with%20a%20clove%20of%20garlic.%20%20So%20delicious!%20%20(This%20takes%20about%2010%20minutes.)%3C/p%3E%3Cp%3EAs%20luck%20would%20have%20it,%20I%20keep%20shallots%20on%20hand,%20as%20I%20do%20green%20onion.%20I%20always%20have%20fresh%20cilantro%20and%20parsley,%20as%20well.%20Seriously,%20I'm%20not%20making%20this%20up.%20%20These%20are%20ingredients%20that%20I%20can%20always%20use,%20and%20a%20fresh%20herb%20keeper%20really%20helps%20to%20keep%20them%20from%20going%20bad--%20for%20up%20to%202%20weeks!%20%20%20This%20took%20no%20more%20than%2010%20minutes%20of%20prep%20work.%3C/p%3E%3Cp%3EYes,%20I%20always%20keep%20a%20jar%20of%20red%20curry%20paste%20on%20hand%20as%20well.%20%20Why?%20Well,%20because%20we%20love%20Thai%20food,%20and%20I'm%20slowly%20learning%20how%20to%20make%20it.%20Red%20curry%20has%20become%20my%20favorite,%20so%20far.%3C/p%3E%3Cp%3EYou%20might%20think%20I%20have%20a%20miniature%20grocery%20store%20in%20my%20pantry.%20%20Well,%20I%20kinda%20do.%20I'm%20known%20to%20hoard%20ingredients,%20because%20I%20am%20very%20impulsive%20about%20what%20I%20want%20to%20make.%20%20Coconut%20milk%20always%20comes%20in%20handy,%20so%20I%20was%20excited%20to%20make%20this%20recipe,%20because%20I%20had%20ALL%20the%20ingredients%20in%20my%20kitchen.%20I%20love%20it%20when%20that%20happens!%3C/p%3E%3Cp%3EIn%20a%20skillet,%20I%20added%20some%20olive%20oil%20and%20sauteed%20one%20chopped%20shallot,%20then%20added%20some%20red%20curry%20paste.%3C/p%3E%3Cp%3ETo%20that%20I%20added%20some%20chicken%20broth%20(yep,%20I%20always%20keep%20a%20few%20boxes%20of%20it,%20or%20I%20freeze%20homemade%20broth)%20and%20coconut%20milk.%20%20This%20will%20become%20the%20poaching%20liquid.%20(I%20added%20the%20herbs%20and%20green%20onion%20before%20poaching%20the%20fish,%20which%20was%20a%20boo-boo...thought%20it%20all%20worked%20out%20fine,%20in%20the%20end).%3C/p%3E%3Cp%3EI%20was%20cooking%20for%20two,%20so%20I%20had%20way%20more%20poaching%20liquid%20than%20I%20needed--%20as%20there%20was%20plenty%20for%204%20fillets.%20Anyway,%20the%20lid%20is%20put%20on%20and%20the%20fish%20is%20poached%20for%207-8%20minutes%20(or%20until%20no%20longer%20opaque).%3C/p%3E%3Cp%3EThe%20fresh%20spinach%20is%20wilted%20and%20piled%20on%20a%20plate%20(or%20a%20deep%20bowl)%20and%20then%20the%20poached%20fish%20is%20set%20atop.%20The%20sauce%20is%20removed%20from%20the%20heat,%20and%20this%20is%20where%20the%20fresh%20herbs%20and%20green%20onion%20should%20be%20added.%20D'oh!%20To%20the%20sauce,%20I%20added%20the%20juice%20of%20one%20fresh%20lime%20(another%20staple%20in%20my%20fridge).%3C/p%3E%3Cp%3EWhat%20a%20fast%20dinner!%20%20What%20a%20healthy%20dinner!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Poaching%20the%20fish%20in%20this%20Thai-inspired%20liquid%20was%20delicious.%20But,%20I%20felt%20like%20there%20was%20just%20a%20little%20something%20missing...%20I%20wasn't%20quite%20sure.%20%20Then%20it%20hit%20me--%20lemongrass!%20%20I%20have%20a%20recipe%20posted,%20for%20Thai-Style%20Chicken%20Soup%20that%20is%20one%20of%20our%20family%20favorites.%20%20This%20recipe%20uses%20red%20curry%20paste,%20lime%20juice,%20cilantro%20and%20lemon%20grass.%20%20So,%20the%20next%20time%20I%20make%20this,%20that's%20what%20I%20will%20add.%20I%20think%20this%20will%20really%20kick%20up%20the%20Thai-inspired%20flavors.%20%20It's%20a%20keeper,%20and%20a%20handy%20dandy%20quick%20dinner%20that%20is%20delicious%20served%20with%20Jasmine%20rice.%20Yum!%3C/p%3E%3Cp%3ENOTE:%20fresh%20lemongrass%20is%20pretty%20easy%20to%20find%20at%20your%20local%20grocery%20store.%20I've%20never%20had%20to%20go%20to%20specialty%20store%20to%20find%20it.%3C/p%3E%3Cp%3Ethe%20end%20of%20each%20recipe%20post.%20If%20you%20cannot%20view%20it,%20you%20might%20be%20using%3C/p%3E%3Cp%3Ean%20older%20version%20of%20InternetExplorer.%20You%20should%20be%20able%20to%20view%20my%3C/p%3E){kind=link}
