- 2 c. sugar
- 1 c. butter
- 2 1/2 c. flour
- 1 c. minced pecans
- 1 c. white raisins
- 1 c. minced dates
- 1/2 c. cocoa
- 1 tbsp. cloves
- 1 tbsp. cinnamon
- 1 tbsp. allspice
- 1 c. buttermilk
- 1 level teaspoon soda
- 3 Large eggs
- 1 c. cooked, unsalted mashed potatoes

- Cream sugar and butter. Mix flour, nuts, raisins, dates, cocoa and spices. Bet sure fruit is well coated. Dissolve soda in buttermilk thoroughly. Add in dry ingredients alternately with buttermilk to creamed mix. Add in Large eggs one at a time, beating after each addition. Add in potatoes. This makes a heavy batter. Spoon batter into a greased and floured 10 inch tube pan. Bake at 375 degrees for 1 hour and 45 min. Cake may cold in pan or possibly on a wire rack.
