- 1/2 cup or 5 ounces (150g) cold unsalted butter, cubed

- 5 slices bacon
- 1 large onion, or 2 medium, thinly sliced
- 2 tablespoons (30g) butter
- 3/4 cup (180ml) crème fraîche (I use Liberty)
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon olive oil
