- Wash the tamarind clean.
- Place the tamarind, jaggery, sugar, dates and water in a deep boiling pan.
- Soak for a few min. Put to boil for about 7-8 min.
- Cold to room temperature. Blend in a mixie until smooth.
- Strain and transfer to the pan again. Boil until thick sufficient to coat the back of a spoon thinly.
- Add in the seasoning. Cold again. Store in clean airtight bottles and chill.
- Makes: 2 1/2 to 3 c..
- Making time: 20 min (excluding cooling time)
- Shelf life: 1 month (refrigerated)
