- 1lb (500g) of fresh tagliatelli
- 7oz (200g) of smoked salmon
- 2 ½ ounce (75g) of butter
- 2 C (40cl) of heavy cream
- 2 finely cut shallots
- 2 egg yolks
- 2oz (50g) of Parmesan cheese
- 2 finely minced sprigs of dill
- Pepper, salt
Инструкции
- Boil salted water in a large pot
- Add in tagliatelli and cook for 4-5 min till they are al dente
- Drain tagliatelli
- Return pot to heat
- Heat butter
- Add in shallots and cook till tender for one minute
- Add in cream and Large eggs and mix energetically while lowering heat
- Let mix thicken for 3-4 min stirring continuously
- Pepper and add in tagliatelli
- Mix for 1 minute
- Remove from heat and add in smoked salmon cut into thin strips and sprinkle with minced dill
- Salt if necessary
- Serve warm sprinkled with grated Parmesan cheese
