,%20powdered%20cardamom%20and%20nutmeg.%3C/p%3E%3Cp%3EI%20visit%20the%20local%20Balaji%20Temple%20near%20home%20-%20they%20have%20a%20canteen%20inside%20the%20temple%20and%20the%20pongal%20there%20is%20just%20divine.%20I%20love%20the%20pongal%20and%20the%20boondi%20laddoos%20they%20serve%20there.%3C/p%3E%3Cp%3EI%20had%20made%20pongal%20last%20year%20during%20sankranti%20and%20it%20was%20a%20little%20seet%20for%20my%20liking%20-%20I%20guess%20the%20jaggery%20used%20was%20a%20bit%20too%20much.%3C/p%3E%3Cp%3EThis%20year%20I%20tried%20my%20hand%20at%20this%20sweet%20treat%20again%20during%20Sankranti.%20I%20used%20rice,%20moong%20dal%20and%20quinoa%20along%20with%20jaggery%20and%20ghee%20to%20make%20this.%20Turned%20out%20pretty%20well.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3Ea%20pinch%20of%20edible%20camphor%20(optional)%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EAdd%201%20teaspoon%20ghee%20in%20a%20frying%20pan%20and%20to%20this%20add%20the%20moong%20dal.%20Roast%20it%20on%20medium%20flame%20till%20the%20dal%20turns%20a%20golden%20color%20and%20becomes%20fragrant.%20Get%20it%20off%20the%20flame%20and%20add%20this%20dal%20to%20a%20pressure%20cooker/pan.%20Wash%20the%20rice%20and%20quinoa%20together.%20Drain%20all%20the%20water%20and%20add%20this%20to%20the%20moong%20dal%20in%20the%20pressure%20cooker/pan.%20Add%204%20cups%20of%20water%20and%20let%20it%20cook%20for%20upto%203%20whistles.%20After%20the%20pressure%20is%20released%20mash%20this%20mixture%20with%20the%20back%20of%20a%20spoon%20and%20let%20it%20sit%20aside.%3C/p%3E%3Cp%3EIn%20a%20saucepan%20add%20the%20jaggery%20and%201/2%20cup%20water%20and%20let%20the%20jaggery%20completely%20dissolve.%20To%20this%20add%20the%20cardamom%20powder,%20nutmeg%20powder%20and%20if%20you%20are%20using%20edible%20camphor,%20add%20that%20as%20well.%20Sieve%20this%20mixture%20and%20add%20it%20to%20the%20rice%20quinoa%20and%20dal%20mixture%20in%20the%20cooker/pan%3C/p%3E%3Cp%3EIn%20a%20separate%20pan,%20heat%202%20tablespoons%20of%20ghee%20and%20roast%20cashews%20to%20golden%20and%20add%20raisins%20to%20it%20and%20let%20them%20puff%20up.%20Add%20this%20mixture%20to%20the%20rice,%20quinoa%20and%20dal%20mixture%20in%20the%20pressure%20cooker/pan.%3C/p%3E%3Cp%3EAdd%20the%20milk%20and%20the%20remaining%20ghee%20and%20mix%20well%20on%20medium%20low%20heat.%20Keep%20stirring%20all%20the%20while.%20Once%20the%20pongal%20gets%20a%20velvety%20texture%20and%20it%20starts%20to%20release%20steam%20(kinda%20like%20boiling),%20get%20it%20off%20the%20heat.%20Pour%20it%20into%20a%20serving%20bowl%20and%20serve%20hot,%20warm%20or%20at%20room%20temperature%3C/p%3E%3Cp%3Eyou%20can%20make%20this%20pongal%20by%20replacing%20the%20quinoa%20with%20broken%20wheat,%20brown%20rice%20or%20rolled%20oats.%20You%20can%20even%20skip%20the%20white%20rice%20and%20replace%20it%20with%20either%20quinoa,%20broken%20wheat,%20rolled%20oats%20or%20brown%20rice%20altogether.%3C/p%3E){kind=link}
