,%20and%20all%20of%20it%20top%20grade.%20They%20sell%20organic%20fruits%20and%20vegetables,%20free-range%20meats,%20truffles,%20desserts---you%20name%20it.%20This%20particular%20challenge%20sounded%20like%20a%20lot%20of%20fun,%20so%20I%20was%20pretty%20excited%20when%20my%20package%20of%20goodies%20arrived.%20My%20mission%20was%20to%20create%20an%20original%20dessert%20recipe%20using%20Fregola%20Sarda%20and%20at%20least%20one%20of%20the%20other%20ingredients:%20Vanilla%20Beans,%20Star%20Anise%20and%20Saffron%20Threads.%3C/p%3E%3Cp%3EAlmost%20like%20being%20on%20an%20episode%20of%20Chopped,%20right?%20Except%20the%20time%20limit%20is%20a%20lot%20longer.%20:)%3C/p%3E%3Cp%3EFregola,%20what?%20Don't%20feel%20bad.%20I%20didn't%20know%20what%20the%20heck%20it%20was%20either.%20Fregola%20Sarda%20is%20an%20Italian%20couscous.%20But%20it's%20not%20really%20just%20couscous--it's%20couscous%20on%20steroids.%20And%20it's%20toasted.%20Sarda%20refers%20to%20the%20part%20of%20Italy%20(Sardinia)%20where%20the%20Fregola%20is%20a%20staple.%20So,%20now%20we%20know%20what%20we%20are%20dealing%20with--a%20pasta,%20so%20to%20speak.%3C/p%3E%3Cp%3EIsn't%20it%20beautiful?%20The%20rough%20exterior%20of%20the%20Fregola%20allows%20sauces%20to%20cling%20to%20it,%20and%20the%20toasting%20process%20gives%20it%20a%20nice%20nutty%20flavor.%3C/p%3E%3Cp%3EI%20knew%20right%20away%20that%20I%20wanted%20to%20make%20a%20custard%20or%20a%20pudding%20of%20some%20sort.%20One%20of%20the%20first%20things%20that%20came%20to%20mind%20was%20a%20classic%20noodle%20pudding--a%20sweet%20kugel,%20if%20you%20will.%20The%20obvious%20other%20ingredient%20to%20add%20to%20that%20would%20be%20the%20vanilla%20bean,%20of%20course,%20but%20one%20whiff%20of%20the%20licorice-y%20Star%20Anise,%20and%20I%20knew%20that%20I%20wanted%20to%20incorporate%20that%20in%20my%20dessert,%20as%20well.%20So,%20without%20further%20ado,%20here%20is%20my%20creation:%3C/p%3E%3Cp%3ESweet%20Apricot%20Fregola%20Kugel%20with%20Spiced%20Cornflake%20Streusel%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20%C2%B0%20F;%20butter%20a%201%20%C2%BD%20quart%20baking%20dish.%3C/p%3E%3Cp%3ECombine%20the%20Fregola%20and%20milk%20in%20a%20small,%20heavy%20saucepan.%3C/p%3E%3Cp%3ESplit%20the%20vanilla%20bean,%20scrape%20out%20the%20seeds%20and%20add%20all%20of%20it%20(seeds%20and%20bean)%3C/p%3E%3Cp%3Eto%20the%20milk.%20Over%20medium%20heat,%20bring%20the%20mixture%20to%20a%20boil.%20Lower%20the%20heat%20and%3C/p%3E%3Cp%3Esimmer%20for%2015-20%20minutes,%20or%20until%20the%20Fregola%20is%20al%20dente,%20and%20the%20mixture%20is%3C/p%3E%3Cp%3Ethickened%20and%20creamy.%20Take%20out%20and%20discard%20the%20vanilla%20bean%20and%20set%20the%20Fregola%3C/p%3E%3Cp%3Easide.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20combine%20the%20eggs,%20ricotta%20cheese,%3C/p%3E%3Cp%3Eapricot%20preserves,%20sugar%20and%20raisins.%20Fold%20in%20the%20Fregola%20mixture,%20stirring%3C/p%3E%3Cp%3Euntil%20well%20combined.%20Spread%20into%20the%20buttered%20casserole%20dish.%3C/p%3E%3Cp%3EFor%20the%20topping,%20place%20the%20corn%20flakes%20and%20the%20butter%20in%20a%3C/p%3E%3Cp%3Emedium%20bowl.%20Stir%20the%20sugar,%20star%20anise%20and%20cinnamon%20together%20and%20add%20to%20the%3C/p%3E%3Cp%3Ecornflakes%20and%20butter.%20Use%20a%20fork%20to%20blend%20the%20ingredients%20until%20crumbly.%3C/p%3E%3Cp%3ESprinkle%20evenly%20over%20the%20top%20of%20the%20kugel.%3C/p%3E%3Cp%3EBake%20the%20kugel%20in%20preheated%20oven%20for%2040%20to%2045%20minutes,%20or%3C/p%3E%3Cp%3Euntil%20the%20top%20is%20a%20golden%20brown.%20Cool%20for%20a%20few%20minutes%20before%20serving.%3C/p%3E%3Cp%3E*For%20tips%20on%20how%20to%20grind%20whole%20spices,%20visit%20the%20marxfoods.com%20site:%20How%20to%20Grind%20Whole%20Spices%20(I%20used%20a%20spice%20grinder%20for%20the%20Star%20Anise)%3C/p%3E%3Cp%3EI%20have%20to%20tell%20you--I%20loved%20this%20stuff!%20The%20Fregola%20had%20just%20the%20right%20texture,%20you%20could%20see%20the%20bits%20of%20the%20vanilla%20bean,%20and%20the%20topping%20was%20buttery,%20crunchy,%20and%20had%20just%20a%20hint%20of%20licorice-y%20Star%20Anise.%3C/p%3E%3Cp%3EI%20was%20tempted%20to%20use%20the%20last%20ingredient,%20the%20saffron,%20in%20a%20whipped%20cream%20topping,%20but%20something%20told%20me%20to%20leave%20well%20enough%20alone.%20Sometimes%20less%20is%20more--the%20kugel%20was%20perfect%20by%20itself.%3C/p%3E%3Cp%3EOn%20December%205th,%20you'll%20be%20able%20to%20see%20who%20my%20competition%20is%20in%20this%20challenge.%20Marx%20Foods%20will%20be%20posting%20all%20of%20the%20recipes%20and%20they%20will%20be%20put%20to%20a%20vote.%20There%20will%20be%20two%20winners--one%20by%20vote,%20and%20one%20by%20judges.%20How%20fair%20is%20that?%20The%20two%20winners%20will%20each%20receive%20$100%20worth%20of%20baking%20goods.%20Wish%20me%20luck!%3C/p%3E%3Cp%3EDisclaimer:%20Marx%20Foods%20sent%20me%20samples%20of%20their%20products%20in%20order%20to%20participate%20in%20this%20contest.%20As%20always,%20all%20opinions%20express
