Super Sunday Caviar-Tomato Bowl
I want to start by saying what an absolute blast I have had this week partaking in the 1st (hopefully annual) Tomato Bowl 2011 with the wonderful people at Red Pack/Gold Pack Tomatoes! The competition has been fierce and my family (and neighbors) are probably on tomato overload right now, but it has all been done in fun and at my last count, between the 2 Food Blogging teams we have created and shared way over 50 recipes with you, our readers! So enjoy the day, have fun watching the game, eat lots of great food and at the end of it all, may the best team win! GO PACK GO!! (you knew I had to get that in there somewhere)
Are you ready for some football?? Game Day is finally upon us, the long anticipated Game of the Year, and THIS is what I have marinating in the fridge right now…
Super Sunday Caviar
INGREDIENTS:
- 1 (14.5 ounce) can Red Gold diced tomatoes with garlic
- 2 cans black-eyed peas-drained
- 1 can white or yellow hominy-drained
- 1 bunch green onions-chopped with tops
- 1 can chopped green chilies
- 1/4 cup fresh garlic-I used the kind in the jar
- 2 avocados- peeled and chopped
- 1/2 cup crumbled feta cheese
- 1 can sliced black olives
- juice of 1/2 lime
- 1 tablespoon sugar
- 2-4 tablespoons salt-to your liking
- 1-2 tablespoons ground cumin
- 1-2 tablespoons black pepper
- 2 tablespoons extra-virgin olive oil
DIRECTIONS:
Mix all items together and refrigerate for at least 1 hour.
In the past I have also added red onion, cheddar cheese or bean and corn salsa.
Serve with corn chips or tortilla chips, or add it to the top of a hamburger!
