  • 2 lb eye of round roast - (to 2 1/2 lbs)
  • 1/8 tsp salt
  • 1/8 tsp freshly-grnd black pepper
  • 8 sm potatoes - (to 10)
  • 3 x celery ribs cut large pcs
  • 3 c. thickly-sliced carrots
  • 1 c. brewed coffee
  • 2 Tbsp. cornstarch mixed with
  • 2 Tbsp. cool water

Инструкции

  1. Sprinkle roast with salt and pepper and place in slow cooker. Pour coffee over roast. Place vegetables around sides of roast; cover and cook on LOW for 8 to 10 hrs.
  2. Remove roast and vegetables. Skim fat from broth and thicken (turn to HIGH) with cornstarch and water mix. Add in meat back to gravy and cook an additional 10 to 20 min, till broth is thick and meat is heated through.
  3. This recipe yields 6 servings.
