- In a large nonstick, oven-proof skillet over medium-high heat, heat the oil. Add in the scallions, ginger, and garlic and saute/fry for 1 to 2 min. Add in the red pepper and saute/fry for 3 min.
- Mix together the Large eggs and soy sauce. Add in to the skillet. Cook over medium heat for 8 to 10 min till Large eggs are set on bottom.
- Place the bean sprouts and snow peas over the Large eggs. Sprinkle with sesame seeds. Place in the oven at 350 degrees and bake just till top is set, about 8 to 10 min. Watch carefully which Large eggs are just cooked and don't become tough.
- Set oven to broil. Broil the frittata for 30 seconds just to give it a nice browned color. Serve in wedges.
- This recipe yields 6 servings.
