- Heat the butter and oil in a saucepan.
- Add in the garlic, onion, carrot and celery and fry for 10 min, till slightly softened, stirring frequently.
- Stir in the tomatoes, sun-dry tomatoes and wine.
- Season to taste.
- Simmer, covered, for about 30 min, stirring occasionally.
- Toss the sauce, goat''s cheese and olives with freshly cooked pasta.
- Garnish with fresh parsley sprigs.
- NOTES : Although the ingredients for this sauce are currently popular, both sun-dry tomatoes and goats cheese have been around for centuries! Serve it with farfalle.
