- 4 T butter
- 2 T onion
- 4 c. soft bread crumbs
- 1/2 c. finely minced celery
- 2 T parsley
- 1 teaspoon salt
- 1 pound grnd beef
- 1/4 c. lowfat milk
- 1 can mushroom soup
- 1 teaspoon pepper

- Heat butter, add in onion, cook till tender but not brown. Add in bread crumbs, celery, parsley and half of salt and pepper. Mix lightly and reserve. Put together meat, lowfat milk and remaining salt and pepper. mix well and add in 1 cup of stuffing. Put wax paper on bread board and meat mix on paper. Flour rolling pin and roll meat into rectangle 9 x 11 inches. Spread remaining stuffing on meat and roll up. Place in shallow pan and bake in moderate oven (350 degrees) for 45 min. Heat 1 can of mushroom soup and pour over meat to serve. Serves 6 to 8.
