%20The%20monitor%20showed%20that%20my%20heart%20is%20taking%20a%20nap%20periodically%20when%20it's%20supposed%20to%20be%20on%20duty.%3C/p%3E%3Cp%3ESoooo...%20now%20that%20I've%20thrown%20my%20tantrum%20(this%20was%20NOT%20supposed%20to%20happen%20to%20ME!!)%20and%20I've%20come%20to%20some%20acceptance,%20I'm%20okay%20with%20it%20(I%20think)%3C/p%3E%3Cp%3ESo%20if%20blog%20posts%20get%20a%20bit%20scarce%20for%20a%20short%20time,%20please%20don't%20forget%20us-%20I%20promise%20we'll%20be%20back%20as%20soon%20as%20possible.%20Doctor%20says%206%20week%20recovery-%20I'm%20holding%20him%20to%20it%20:)%3C/p%3E%3Cp%3EYears%20ago%20when%20we%20lived%20in%20the%20beautiful%20Hudson%20Valley%20of%20New%20York,%20we%20used%20to%20go%20to%20a%20WONDERFUL%20local%20restaurant%20called%20the%20Iron%20Forge%20Inn.%20It%20was%20family%20owned%20and%20the%20chef%20was%20one%20of%20the%20sons%20who%20left%20for%20a%20while%20to%20train%20as%20a%20chef%20and%20came%20back%20to%20take%20over%20the%20kitchen.%20I%20once%20had%20a%20gorgeous%20stuffed%20acorn%20squash%20and%20tried%20for%20years%20to%20replicate%20the%20recipe.%20A%20few%20years%20ago%20I%20found%20a%20recipe%20in%20some%20magazine%20(no,%20I%20didn't%20remember%20to%20write%20down%20which-%20sorry)%20which%20was%20as%20close%20as%20I've%20come%20to%20his%20version.%20With%20a%20little%20tweaking%20this%20is%20my%20version%3C/p%3E%3Cp%3EHeads%20up-%20peeling%20acorn%20squash%20is%20a%20royal%20pain.%20I%20use%20a%20peeler%20on%20the%20rounded%20ridges%20and%20a%20small%20sharp%20knife%20for%20the%20crevices.%20One%20squash%20will%20serve%203-4%20people%20as%20a%20lovely%20Autumn%20side.%20Enjoy!%3C/p%3E%3Cp%3EYes,%20I%20over-browned%20it%20a%20bit-%20I%20got%20distracted!%20Pretty%20easy%20in%20this%20house!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%20Soak%20a%20dozen%20round%20wooden%20toothpicks%20in%20warm%20water%20for%20a%20few%20minutes.%20Cut%20a%20small%20slice%20off%20the%20bottom%20of%20each%20squash%20so%20it%20sits%20level,%20then%20cut%20about%20an%20inch%20of%20the%20top-%20you%20should%20expose%20the%20seeds.%20Peel%20the%20squash%20and%20scoop%20out%20the%20seeds.%20Brush%20the%20squashes%20with%20a%20tablespoon%20or%20so%20of%20olive%20oil%20and%20season,%20inside%20and%20out,%20with%20salt%20and%20pepper.%20Wrap%20each%20squash%20with%204%20slices%20of%20bacon-%20tuck%20one%20end%20of%20each%20strip%20under%20the%20squash%20and%20the%20other%20end%20in%20the%20cavity.%20Use%20the%20toothpicks%20to%20secure.%20It%20should%20look%20like%20spokes.%20Place%20squashes%20upside%20down%20(cavity%20down)%20on%20a%20rack%20in%20a%20pan%20and%20bake%20for%20about%2030%20minutes%20till%20the%20bacon%20is%20golden%20crisp%20and%20the%20squash%20is%20tender,%20but%20not%20mushy.%20Set%20aside%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3EHeat%202-3%20more%20tblsp%20olive%20oil%20in%20a%20very%20large%20skillet.%20Saute%20onion%20till%20soft,%20then%20add%20garlic%20and%20saute%20another%202%20minutes,%20stirring%20so%20garlic%20doesn't%20burn.%20Add%20the%20chard%20in%20large%20handfuls,%20stirring%20down%20as%20it%20wilts.%20When%20it's%20all%20in%20there,%20cover%20and%20steam%20for%20about%204-5%20minutes,%20stirring%20halfway.%20Chard%20should%20be%20cooked,%20but%20still%20bright%20green.%20Remove%20to%20a%20large%20bowl%20to%20cool%20and%20wipe%20out%20skillet.%3C/p%3E%3Cp%3EHeat%20another%201-2%20tblsp%20oil%20over%20medium%20high%20heat%20and%20add%20mushrooms.%20Toss%20and%20saute%20till%20lightly%20browned%20and%20there's%20no%20liquid%20left.%20Allow%20to%20cool.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20500%20degrees.%20If%20there's%20a%20lot%20of%20liquid%20in%20the%20chard,%20drain%20and%20squeeze%20a%20bit.%20Stir%20in%20the%20mushrooms,%20thyme,%20and%20nutmeg.%20Season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EFlip%20squash%20over%20(right%20side%20up%20and%20remove%20toothpicks.%20Place%20in%20a%20baking%20dish%20sprayed%20with%20baking%20spray.%20Stuff%20cavities%20with%20chard%20mixture.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20mix%20together%20bread%20crumbs,%20cheese,%20parsley,%20and%20melted%20butter.%20Top%20squash%20with%20crumb%20mixture.%20Bake%20for%208-10%20minutes%20till%20warmed%20and%20golden%3C/p%3E%3Cp%3EWe're%20linking%20up%20tonight%20to%20Michael's%20wonderful%20Foodie%20Friday%20at%20Designs%20by%20Gollum%3C/p%3E%3Cp%3ECome%20join%20us%20and%20be%20prepared%20to%20drool!%3C/p%3E%3Cp%3EIf%20you'd%20like%20to%20get%20our%20weekly%20Bonus%20Recipes%20and%20tips,%20come%20on%20over%20and%20be%20a%20friend%20on%20Bramasole's%20Facebook%20page%3C/p%3E%3Cp%3EWe%20love%20talking%20to%20you!%3C/p%3E%3Cp%3EAs%20Always,%3C/p%3E%3Cp%3EBuon%20Cibo,%20Buon%20Amici,%3C/p%3E%3Cp%3EPattie%20and%20Allie%3C/p%3E){kind=link}
