I admit that my family and I have become "Strawberry food snobs". We like our berries fresh from the fields. We live near a local farmstand that grows organic berries, picked fresh daily. They are the best I've ever tasted! We never wash them until right before eating them (lest they spoil faster). We like berries that are dark red in the center, and we like them sweet. Sometimes I buy strawberries elsewhere, and I am disappointed. They're tart and just not up to our standards. .%20%20We%20like%20berries%20that%20are%20dark%20red%20in%20the%20center,%20and%20we%20like%20them%20sweet.%20%20%20Sometimes%20I%20buy%20strawberries%20elsewhere,%20and%20I%20am%20disappointed.%20They're%20tart%20and%20just%20not%20up%20to%20our%20standards.%20Such%20was%20the%20fate%20of%20some%20berries%20that%20I%20found%20in%20my%20fridge--%20they%20were%20looking%20a%20little%20worse%20for%20wear.%20%20These%20didn't%20come%20from%20our%20local%20farmstand,%20so%20they%20were%20shoved%20aside.%20I%20don't%20like%20to%20waste%20food,%20so%20I%20had%20to%20make%20a%20decision%20on%20how%20to%20use%20them.%20%20I%20surveyed%20my%20kitchen%20and%20noticed%20a%20loaf%20of%20French%20bread%20that%20had%20gone%20a%20bit%20stale.%20%20I%20originally%20bought%20it%20to%20make%20the%20Pioneer%20Woman's%20Cheesy%20Garlic%20Bread,%20but%20that%20never%20happened.%20%20I%20also%20have%20a%20generous%20supply%20of%20free%20farm%20fresh%20eggs,%20courtesy%20of%20my%20horse's%20ranch%20where%20she%20lives.%20%20%20An%20idea%20was%20born!%3C/p%3E%3Cp%3EBorrowing%20a%20method%20I%20use%20to%20make%20homemade%20strawberry%20jam,%20I%20cooked%20the%20berries%20with%20sugar,%20a%20pinch%20of%20kosher%20salt,%20lemon%20zest,%20lemon%20juice%20and%20a%20pat%20of%20butter%20(the%20butter%20prevents%20foam%20from%20building).%20%20I%20added%201/4%20cup%20of%20water%20and%20brought%20this%20to%20a%20rolling%20boil.%3C/p%3E%3Cp%3EOne%20the%20cooked%20strawberries%20coat%20the%20back%20of%20%20a%20spoon,%20I%20used%20my%20immersion%20blender%20to%20puree'%20the%20sauce.%20you%20could%20do%20this,%20in%20batches,%20with%20a%20blender.%20%20After%20pouring%20it%20into%20a%20bowl,%20I%20decided%20to%20place%20it%20on%20a%20layer%20of%20ice%20and%20put%20it%20into%20the%20fridge.%20%20Now,%20for%20the%20filling.%20%20For%20inspiration,%20I%20borrowed%20the%20components%20I%20used%20to%20make%20Strawberry%20Blintzes.%20I%20didn't%20have%20ricotta%20cheese,%20but%20I%20figured%20that%20cream%20cheese%20would%20do%20the%20trick--%20otherwise,%20I%20would%20have%20used%20a%20combo%20of%20both.%3C/p%3E%3Cp%3EThese%20berries%20are%20huge!%20My%20son%20bought%20them%20at%20a%20road%20stand,%20and%20I%20thought%20they%20looked%20a%20little%20worn%20for%20wear.%20These%20would%20be%20perfect.%20%20I%20used%20an%208%20oz%20package%20of%20cream%20cheese,%201/2%20cup%20powdered%20sugar,%20the%20zest%20of%20an%20orange,%20real%20vanilla,%20a%20pinch%20of%20kosher%20salt%20and,%20of%20course,%20strawberries.%20I%20chose%20six%20HUGE%20berries.%20%20My%20food%20processor%20did%20the%20hard%20work%20for%20me.%20I%20set%20that%20aside.%3C/p%3E%3Cp%3EFor%20six%20slices%20of%20French%20bread,%20I%20used%20four%20eggs,%20about%201%20cup%20of%20whole%20milk,%20and%20a%20splash%20of%20vanilla.%20%20In%20my%20honest%20opinion,%20using%20fresh%20French%20bread%20doesn't%20work%20well,%20and%20the%20French%20toast%20can%20turn%20out%20really%20soggy.%20The%20bread%20soaked%20up%20all%20the%20custard!%20%20I%20like%20to%20lightly%20oil%20my%20grill%20and%20then%20add%20a%20pat%20of%20butter%20for%20flavor.%20You%20can%20use%20all%20butter,%20if%20you%20wish.%20%20Who%20doesn'%20t%20know%20how%20to%20cook%20French%20toast?!%20%20Once%20I%20had%20a%20cooked%20side,%20I%20filled%20every%20other%20slice%20with%20the%20cream%20cheese%20spread,%20then%20put%20a%20slice%20right%20on%20top.%20%20I%20only%20used%201/4%20of%20the%20strawberry%20filling,%20but%20that's%20okay...%20I'm%20sure%20I'll%20think%20of%20a%20way%20to%20use%20it%20up!%3C/p%3E%3Cp%3ENow,%20to%20plate%20this...%20by%20the%20way,%20I'm%20one%20of%20those%20fanatics%20who%20pre-heats%20her%20plates!%20I%20like%20to%20serve%20things%20hot!%3C/p%3E%3Cp%3EYou%20could%20add%20maple%20syrup%20to%20this,%20or%20leave%20this%20plain.%20%20This%20morning,%20I%20wanted%20to%20use%20the%20strawberry%20sauce,%20which%20had%20thickened%20up%20very%20nicely...%3C/p%3E%3Cp%3EVERDICT:%20%20I%20felt%20a%20sense%20of%20accomplishment%20that%20I%20didn't%20let%20any%20food%20go%20to%20waste.%20The%20stale%20bread%20was%20%22custardy%22%20and%20had%20softened%20just%20right.%20My%20family%20loved%20this%20brunch%20dish,%20and%20my%20son%20said%20that%20it%20tasted%20like%20my%20Strawberry%20Blintzes.%20I%20agreed,%20and%20it%20was%20a%20lot%20less%20work%20than%20making%20crepes.%20The%20next%20time%20I%20make%20this,%20I%20will%20use%20a%20combination%20of%20cream%20cheese%20and%20ricotta%20cheese.%3C/p%3E%3Cp%3EI%20have%20two%20pints%20of%20freshly%20picked%20strawberries%20in%20my%20fridge.%20%20I%20think%20it's%20time%20to%20make%20Strawberry%20Ice%20Cream...%20wait,%20maybe%20strawberry%20sorbet.%20%20Then%20again,%20my%20son%20keeps%20asking%20me%20to%20make%20Strawberry%20Cream%20Cake.%20%20See%20what%20I%20mean?%20%20I%20seriously%20doubt%20that%20my%20family%20could%20ever%20tire%20of%20strawberries.%20%20Thank%20goodness%20they%20are%20growing%20just%20three%20miles%20down%20our%20road!%3C/p%3E%3Cp%3EEnjoy,
