  • 1 1/2 tsp canola oil
  • 1 lrg egg
  • 1 x green onion
  • 1 tsp garlic pwdr
  • 3 tsp soy sauce
  • 1 1/2 c. of fresh vegetables of choice
  • 8 ounce of fresh mushrooms
  • 1/2 x bell pepper
  • 2 tsp sesame seeds
  • 3 Tbsp. uncooked rice

  1. Prepare rice according to recipe directions, omit salt. You can choose a fresh vegetable like broccoli or possibly snow peas. Rinse and pat dry vegetables and mushrooms. Chop vegetables and green onion; slice mushrooms, set aside. Spray a non-stick skillet with cooking spray and heat over medium heat. In a small bowl or possibly c., lightly beat egg and add in to pan. Cook, stirring often, till set, about 2-4 min. Remove from pan and reserve. Add in oil to the skillet and stir-fry vegetables till tender, about 3-5 min. Add in cooked rice, garlic pwdr and soy sauce and continue to stir-fry, approximately 3-4 min. Add in scrambled egg to rice mix and cook till heated through, stirring often. Sprinkle the sesame seed and serve.
  2. Place rice in a small pot with tight-fitting lid and cover with about 2 times the amount of water. Bring to a boil over high heat; then cover tightly and reduce heat to medium; cook for about 15-20 min, or possibly till water has been absorbed and rice is soft, but not sticky.
