%20into%20inch%20cubes.%20%20Salt%20the%20meat,%20then%20brown%20in%20a%20large%20casserole.%20%20Remove%20and%20brown%20the%20aubergine%20(you'll%20need%20more%20oil).%20%20Turn%20the%20heat%20down%20and%20fry%20the%20onions,%20garlic%20and%20cumin%20seeds%20until%20wilted.%20%20Add%20the%20harissa,%20some%20salt%20and%20pepper%20and%20the%20tomatoes.%20and%20bring%20to%20the%20boil.%20%20Stir%20in%20the%20aubergine%20and%20then%20poke%20the%20lamb%20back%20in.%20%20Fill%20the%20tin%20with%20boiling%20water%20and%20add%20that,%20too%20(mind%20fingers).%20%20Bring%20to%20the%20boil,%20then%20stick%20it%20in%20a%20low%20oven%20(150%20degrees%20centigrade,%20ish)%20for%20about%202%20hours,%20checking%20once%20in%20a%20while%20that%20it%20hasn't%20dried%20out%20(add%20more%20water).%20%20It's%20done%20when%20the%20meat%20falls%20off%20the%20bone%20when%20you%20poke%20it%20with%20a%20fork...%3C/p%3E%3Cp%3EBut%20sometimes...I%20want%20something%20less%20meaty.%20%20Vegetarian%20stews%20rarely%20cut%20it,%20they%20don't%20have%20the%20depth%20of%20flavour%20that%20you%20get%20from%20meat,%20even%20if%20you%20try%20to%20(not%20quite%20literally)%20beef%20them%20up%20by%20adding%20Marmite.%20%20I%20think%20I%20need%20a%20greater%20well-flavoured-sauce-to-chunks%20ratio%20than%20I%20can%20get%20from%20veg.%20%20Probably,%20I%20just%20want%20the%20meat%20fat%20to%20thicken%20my%20sauce.%20%20On%20occasion%20when%20I've%20had%20any%20dripping,%20I've%20done%20that.%20%20I%20have%20tried%20(not%20necessarily%20that%20hard)%20to%20make%20vegetable%20soup-stews%20that%20cut%20the%20mustard.%20%20The%20only%20one%20I've%20found%20that%20comes%20close%20is%20a%20tomatoey%20harira%20adapted%20from%20this%20book,%20but%20I%20so%20rarely%20have%20the%20quantities%20of%20fresh%20parsley%20and%20coriander%20around%20to%20make%20that%20(something%20close%20to%2070g%20of%20each...)%20and%20it%20wouldn't%20be%20the%20same%20without.%20%20It%20is%20basically%20a%20mixture%20of%20cumin-y%20tomatoes,%20chickpeas,%20and%20the%20aformentioned%20green%20herbs.%3C/p%3E%3Cp%3EAlso%20in%20that%20book%20is%20a%20rather%20unappetising%20recipe%20for%20taco%20soup%20-%20which%20looks%20like%20soggy%20tacos%20in%20a%20bowl%20of%20watery%20broth.%20%20Not%20attractive%20to%20the%20thick-and-flavourful-sauce%20enthusiast%20(card%20carrying%20member).%20%20While%20drifting%20around%20The%20Pioneer%20Woman's%20recipe%20world%20bit,%20I%20saw%20another%20recipe%20for%20taco%20soup,%20this%20time%20one%20that%20was%20essentially%20chilli%20(close%20to%20my%20favourite%20food)%20with%20extra%20stock%20in%20it%20to%20make%20it%20soupy%20-%20it's%20similar%20right%20down%20to%20the%20recommended%20accompaniments.%20%20It%20contains%20quite%20a%20lot%20of%20pre-packaged%20stuff,%20which%20needless%20to%20say%20isn't%20really%20available%20in%20British%20supermarkets.%20%20Also,%20it%20contained%20actual%20beef,%20which%20is%20expensive%20and%20I%20regard%20as%20unnecessary%20except%20for%20special%20occasions.%20%20But%20the%20concept?%20%20That%20looked%20good.%20%20This%20evening,%20leaving%20Cambridge%20for%20St%20Albans%20circa%207:30%20(it's%20an%20hour's%20drive%20home)%20post%20carol%20service,%20I%20discovered%20I%20was%20craving%20it.%20%20The%20signs%20looked%20good:%3C/p%3E%3Cp%3E-%20Already%20cooked%20off%20pinto%20beans%20in%20freezer%20(I%20buy%20a%20%20packet%20then%20cook%20the%20whole%20thing%20on%20an%20evening%20I'm%20in,%20then%20bag%20them%20up%20and%20freeze%20them.%20%20I%20always%20cook%20them%20until%20they're%20more%20or%20less%20mush,%20and%20they're%20perfect%20for%20this.%20%20I%20realise%20that%20they%20make%20tins%20of%20them,%20but%20I'm%20a%20purist.)%3C/p%3E%3Cp%3E-%20Tins%20of%20tomatoes%20in%20cupboard%3C/p%3E%3Cp%3E-%20More%20onions%20and%20garlic%20than%20I%20ever%20know%20what%20to%20do%20with%3C/p%3E%3Cp%3E-%20Yesterday's%20discovery%20that%20the%20following%20can%20now%20be%20bought%20at%20Tescos:%3C/p%3E%3Cp%3E(I%20know%20that%20few%20others%20will%20be%20quite%20so%20excited%20by%20this.%20%20It's%20stock,%20yes.%20%20I%20don't%20eat%20meat%20unless%20it's%20come%20from%20animals%20that%20have%20been%20reared%20to%20better-than-industrial%20standards%20-%20I%20don't%20want%20to%20be%20responsible%20for%20battery%20chicken.%20%20This%20stuff%20is%20Really%20Good%20Stock,%20is%20inexpensive,%20AND%20is%20free%20range.%20Tescos%20should%20be%20encouraged.)%3C/p%3E%3Cp%3E-%20The%20fact%20that%20I%20would%20*drive%20past*%20a%20Tescos%20on%20the%20way%20home,%20and%20could%20get%20stock,%20and,%20better,%20tortilla%20chips.%3C/p%3E%3Cp%3ESo,%20at%20half%20past%20nine%20this%20evening,%20I%20began%20to%20make%20soup.%20%20Onions%20and%20garlic%20were%20chopped%20small%20and%20fried%20in%20a%20large%20pot%20until%20translucent.%20%20The%20packet%20of%20fajita%20mix%20(only%20ever%20the%20Discovery%20brand,%20which%20seems%20to%20be%20made%20of%20real%20food%20and%20doesn't%20contain%20MSG)%20was%20stirred%20in.%20%20The%20tomatoes%20were%20added.%20%20A%20potato%20masher%20was%20applied%20when%20they%20appeared%20to%20be%20recalcitrantly%20large.%20%20The%20stock%20was%20sloshed%20in%20and%20brought%20to%20the%20boil.%20%20Once%20I'd%20got%20to%20this%20point,%20my%20bag%20of%20beans%20had%20just%20about%20finished%20in%20the%20microwave%20and%20was%20glopped%20in.%20%20Tasting%20revealed%20the%20need%20for%20half%20a%20teaspoon%20of%20Marmite%20(that%20would%20be%20'yeast%20extract',%20nothing%20weird%20if%20you%20never%20met%20it)%20and%20some%20salt.%20%20I%20could%20have%20added%20the%20limes%20I%20bought%20for%20this%20purpose%20but%20I%20forgot.%20%20That%20would%20have%20reduced%20the%20need%20for%20salt.%20%20When%20hot%20through,%20it%20was%20ladled%20into%20a%20bowl,%20covered%20with%20grated%20cheese%20and%20a%20handful%20of%20tortilla%20chips%20was%20crumbled%20over%20that.%3C/p%3E%3Cp%3EI%20had%20seconds,%20despite%20there%20being%20no%20hunger-need%20to.%20%20Pleased%20with%20self.%20%20To%20be%20honest,%20the%20whole%20excuse%20in%20the%20first%20place,%20beyond%20needing%20something%20healthy%20and%20with%20vegetables,%20was%20the%20existence%20of%20that%20stock%20and%20a%20gravy%20I%20made%20with%20it%20yesterday.%20%20I%20did%20also%20buy%20some%20organic%20stock%20cubes%20both%20vegetarian%20and%20chickeny%20for%20further%20experimentation%20-%20I%20want%20to%20see%20what%20happens%20when%20I%20make%20it%20truly%20vegetarian.%20%20Need%20to%20cook%20more%20beans%20first.%20%20And%20eat%20this%20batch%20-%20I%20think%20there's%20about%208%20portions%20here...%3C/p%3E){kind=link}
