%20and%20I%20can%20open%20my%20windows%20again.%3C/p%3E%3Cp%3EUnlike%20in%20Stamford%20where%20we%E2%80%99d%20hide%20in%20our%20less-than-optimal%20air%20conditioning%20and%20only%20venture%20out%20to%20go%20food%20shopping%20and%20maybe%20spend%20a%20few%20hours%20at%20the%20local%20beach,%20we%20haven%E2%80%99t%20let%20the%20heat%20stop%20us%20from%20going%20out%20and%20about,%20especially%20on%20the%20weekends.%20(I%20just%20have%20to%20make%20sure%20that%20I%20don%E2%80%99t%20try%20to%20apply%20sunscreen%20to%20my%20face%20post-workout%20without%20allowing%20some%20time%20for%20evaporation,%20because%20OH%20MY%20GOD%20MY%20EYES.)%20Granted,%20during%20this%20most%20recent%20weekend%20our%20main%20reason%20to%20go%20out%20was%20to%20go%20to%20the%20Rare%20and%20Obscure%20Beer%20Festival%20at%20Max%E2%80%99s%20Taphouse%20which%20was%20both%20a%20lot%20of%20fun%20and%20the%20perfect%20place%20to%20rest%20and%20rejuvenate%20after%20a%20two-mile%20walk%20over%20there,%20but%20still%E2%80%93the%20fact%20that%20we%E2%80%99re%20not%20just%20cloistering%20ourselves%20in%20air%20conditioning%20during%20these%20heat%20waves%20is%20progress%20for%20us.%3C/p%3E%3Cp%3EMuch%20like%20my%20friend%20The%20Kitchen%20Witch,%20we%E2%80%99ve%20been%20trying%20to%20minimize%20stove%20and%20oven%20time%20to%20keep%20our%20place%20as%20cool%20as%20possible,%20so%20there%20have%20been%20many%20carafes%20of%20gazpacho%20and%20bowls%20of%20ceviches%20and%20crudos%20and%20tartares%20being%20served,%20especially%20on%20the%20weekends.%3C/p%3E%3Cp%3EAt%20least%20this%20overly-warm%20weather%20brings%20with%20it%20tons%20of%20delicious%20produce.%20We%20can%20still%20find%20some%20local%20strawberries%20at%20the%20farmers%20markets%20in%20town,%20but%20even%20the%20Teet%20and%20the%20Whole%20Foods%20have%20solid%20selections%20of%20heirloom%20tomatoes%20and%20stone%20fruits%20already.%20You%20may%20remember%20that%20last%20year%20I%20went%20a%20little%20nuts%20in%20August%20as%20Fairway%20had%20organic%20heirlooms%20on%20sale%20for%20the%20entire%20month;%20I%E2%80%99ve%20been%20able%20to%20find%20some%20comparable%20ones%20down%20here%20for%20pretty%20reasonable%20prices%20now,%20so%20instead%20of%20this%20year%20being%20the%20month%20of%20tomatoes%20it%E2%80%99s%20going%20to%20be%20the%20SUMMER%20OF%20TOMATOES.%20(At%20least%20I%20hope%20it%20will.)%3C/p%3E%3Cp%3EAnd%20this%20salad%20pictured%20above%20bears%20a%20strong%20resemblance%20to%20one%20I%20would%20make%20last%20summer,%20but%20it%E2%80%99s%20significantly%20better%20mainly%20because%20it%20comes%20from%20the%20creative%20mind%20of%20Stephanie%20Izard,%20the%20first%20woman%20Top%20Chef%20winner%20and%20all-around%20badass.%20She%20calls%20for%20plums%20and%20nectarines%20in%20her%20salad%20along%20with%20tomatoes,%20but%20what%20makes%20the%20salad%20really%20special%20is%20the%20dressing%20she%20advocates:%20pistachio-lemon%20vinaigrette.%3C/p%3E%3Cp%3EI%20hate%20her*%20for%20coming%20up%20with%20such%20a%20brilliant%20dressing%20that%20does%20so%20much%20with%20so%20little.%20By%20combining%20toasted%20and%20salted%20pistachios%20with%20lemon%20juice,%20olive%20oil,%20salt,%20pepper,%20and%20sambal,%20you%20get%20a%20flavorful%20dressing%20that%20strikes%20that%20right%20balance%20of%20salty,%20spicy,%20and%20sour,%20plus%20the%20nuts%20add%20some%20interesting%20texture%20via%20crunch.%20On%20this%20salad%20it%20gives%20just%20a%20little%20more%20complexity%20to%20an%20otherwise%20straightforward%20dish,%20and%20personally%20I%20think%20the%20addition%20of%20the%20nuts%20makes%20this%20as%20an%20ideal%20light%20lunch%20or%20even%20a%20light%20dinner%20if%20the%20heat%20has%20sapped%20most%20of%20the%20will%20to%20even%20assemble%20food%20from%20you.%20Stephanie%20is%20much%20more%20precise%20with%20her%20plating,%20while%20abo%20e%20you%20see%20the%20more%20slapdash%20version%20of%20this%20salad.%20It%E2%80%99s%20still%20really%20good,%20but%20probably%20not%20worthy%20of%20a%20Top%20Chef.%20When%20it%E2%80%99s%20too%20hot%20to%20function,%20I%E2%80%99d%20like%20to%20think%20she%20would%20forgive%20me%20that%20detail.%3C/p%3E%3Cp%3E*not%20at%20all%3C/p%3E%3Cp%3ETomato%20and%20Stone%20Fruit%20Salad%20with%20Mozzarella%3C/p%3E%3Cp%3Eserves%202%20as%20a%20light%20dinner%20or%204%20as%20a%20side%20salad%3C/p%3E%3Cp%3EAdapted%20from%20Girl%20In%20The%20Kitchen%20by%20Stephanie%20Izard%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20everything%20but%20the%20olive%20oil,%20salt,%20and%20pepper,%20and%20then%20slowly%20whisk%20in%20the%20olive%20oil.%20Season%20to%20taste%20with%20salt%20and%20pepper%20and%20you%20can%20definitely%20save%20this%20in%20an%20airtight%20container%20in%20the%20refrigerator%20for%20a%20few%20days.%3C/p%3E%3Cp%3EPlace%20the%20mozzarella%20in%20a%20large%20bowl%20with%20the%20tomatoes%20and%20plums,%20season%20with%20salt%20and%20pepper%20and%20toss%20well.%20Then%20drizzle%20the%20pistachio%20vinaigrette%20over%20top,%20and%20place%20on%20serving%20plates%20and%20garnish%20with%20the%20torn%20basil%20leaves%20and%20serve%20immediately.%3C/p%3E){kind=link}
