.%20There%E2%80%99s%20nothing%20fancy%20about%20it.%20In%20fact%20from%20the%201950s%20well%20into%20the%201970s%20this%20salad%20was%20ubiquitous.%20Mostly%20because%20there%20weren%E2%80%99t%20a%20lot%20of%20other%20varieties%20of%20lettuce%20available%20outside%20the%20San%20Joaquin%20Valley.%20Modern%20advances%20changed%20that%20fact.%20Soon%20a%20backlash%20against%20the%20once%20popular%20Steakhouse%20Wedge%20Salad%20began%20to%20spread%20across%20the%20continent.%20By%20the%20late%201980s%20the%20iceberg%20revulsion%20was%20in%20full%20swing.%20You%20could%20no%20longer%20admit%20to%20being%20a%20fan%20of%20the%20lowly%20Steakhouse%20Wedge%20Salad.%20It%20was%20dead%20to%20the%20likes%20of%20you%20and%20me.%3C/p%3E%3Cp%3EFortunately%20for%20us%20other%20types%20of%20lettuce%20began%20to%20come%20into%20fashion.%20Baby%20field%20greens%20made%20their%20first%20appearances.%20What%20a%20revelation%20they%20were.%20So%20tiny.%20So%20delicate.%20Each%20leaf%20like%20a%20small%20gift.%20With%20their%20discovery%20the%20mesclun%20salad%20was%20born%20and%20it%20stormed%20our%20plates.%20It%20made%20all%20the%20other%20types%20of%20lettuce%20seem%20brutish.%3C/p%3E%3Cp%3ELike%20any%20self-respecting%20foodie%20I%E2%80%99ll%20admit%20I%20embraced%20the%20mesclun%20salad.%20Who%20among%20us%20didn%E2%80%99t?%20But%20I%20remained%20a%20closeted%20iceberg%20lettuce%20fan.%20It%E2%80%99s%20hard%20to%20beat%20a%20fat%20chunk%20of%20crunchy%20iceberg%20lettuce%20tucked%20between%20the%20buns%20of%20a%20really%20juicy%20burger.%20In%20fact%20I%20credit%20burgers%20for%20helping%20me%20look%20more%20clearly%20at%20those%20trendy%20but%20emaciated%20limp%20little%20lettuce%20leaves%20and%20think%E2%80%93%20Is%20that%20all%20there%20is?%20Because%20when%20it%20comes%20to%20beef%E2%80%93%20especially%20steak%E2%80%93%20nothing%20beats%20iceberg%20lettuce.%3C/p%3E%3Cp%3EModern%20Day%20Steakhouse%20Wedge%20Salad%3C/p%3E%3Cp%3EAnd%20so%20we%20come%20full%20circle.%20The%20Steakhouse%20Wedge%20Salad%20has%20made%20a%20serious%20comeback.%20Exciting%20versions%20featuring%20radicchio%20and%20house-cured%20charcuterie%20are%20finding%20their%20way%20back%20onto%20the%20menus%20of%20restaurants%20everywhere.%20But%20there%E2%80%99s%20something%20about%20the%20iceberg%20original%20that%20continues%20to%20hold%20my%20attention.%20So%20today%20I%20pay%20homage%20to%20the%20original,%20with%20one%20small%20twist.%20In%20a%20nod%20to%20my%20parents%20and%20the%20steakhouses%20of%20their%20youth,%20I%E2%80%99m%20serving%20my%20salad%20with%20steak.%20Not%20on%20the%20side%20or%20in%20a%20separate%20course.%20My%20Steakhouse%20Wedge%20Salad%20has%20blackened%20chunks%20of%20spiced%20up%20flatiron%20steak%20standing%20in%20for%20traditional%20%E2%80%98croutons%E2%80%99.%20GREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EMake%20the%20spice%20mixture:%20Combine%20the%20paprika,%20garlic%20powder,%20onion%20powder,%20thyme,%20oregano,%20black%20pepper%20and%20cayenne%20pepper%20in%20a%20bowl%20until%20evenly%20mixed.%20Can%20be%20made%20up%20to%201%20week%20in%20advance.%20Store%20in%20an%20airtight%20container%20in%20a%20cool,%20dry%20place.%3C/p%3E%3Cp%3EMake%20the%20dressing:%20Whisk%20shallot,%20sour%20cream,%20buttermilk,%20and%20white%20wine%20vinegar%20in%20a%20small%20bowl;%20fold%20in%20%C2%BD%20cup%20crumbled%20blue%20cheese.%20Adjust%20consistency%20with%20more%20sour%20cream%20or%20buttermilk,%20if%20needed.%20Season%20with%20salt%20and%20pepper%20to%20taste.%20Can%20be%20made%20up%20to%203%20days%20in%20advance.%20Store%20covered%20and%20chilled.%3C/p%3E%3Cp%3EBlacken%20the%20steak:%20Cut%20the%20steak%20into%201-inch%20cubes.%20Set%20aside%20at%20room%20temperature.%3C/p%3E%3Cp%3EPlace%20the%20spice%20mixture%20in%20a%20shallow%20bowl.%20Coat%20the%20cubes%20of%20steak%20in%20the%20mixture.%20Set%20aside%20in%20a%20single%20layer.%3C/p%3E%3Cp%3EPlace%20a%20large%20cast%20iron%20skillet%20over%20medium%20high%20heat.%20Add%202%20tablespoons%20oil%20and%20let%20it%20get%20quite%20hot,%20almost%20smoking.%20Once%20the%20oil%20in%20the%20pan%20is%20hot%20(it%20should%20shimmer)%20add%20a%20few%20chunks%20of%20steak%20to%20the%20pan.%20Do%20not%20crowd%20them,%20work%20in%20batches.%20Quickly%20blacken%20the%20meat%20on%20all%20sides,%20turning%20often.%20Cook%20each%20one%20about%202%20minutes%20total%20for%20medium%20rare.%20Move%20them%20to%20a%20paper%20towel%20lined%20plate%20to%20drain%20as%20they%20finish.%20Continue%20cooking%20the%20meat%20in%20batches%20until%20it%20is%20all%20blackened.%20You%20will%20need%20to%20refresh%20the%20oil%20once%20or%20twice%20during%20the%20process.%20Let%20it%20become%20hot%20again%20before%20continuing.%3C/p%3E%3Cp%3EAssemble%20the%20salad:%20Peel%20a%20few%20of%20the%20outer%20layers%20away%20from%20the%20head%20of%20iceberg%20lettuce.%20You%20should%20be%20left%20with%20a%20tight,%20compact%20ball%20about%207-inches%20in%20diameter.%20Locate%20the%20stem%20end%20
