  • 1 lrg Onion, minced
  • 1 x Clove garlic, chopped
  • 3 Tbsp. Dry sherry, see pantry
  • 4 c. Low sodium chicken broth, defatted
  • 2 tsp Dry Italian seasoning
  • 9 ounce Tortelloni, cheese filled, reduced-fat
  • 15 ounce Tomato sauce, low salt
  • 10 ounce Frzn spinach, thawed but undrained
  • 1/8 tsp Freshly grnd black pepper
  • 1 tsp Sugar, optional
  • 4 tsp Grated Parmesan cheese

  1. "Spinach, tortelloni and just a touch of sherry turn a simple tomato base into an extraordinary soup."
  2. PANTRY: Substitutes for wine: apple juice, pear juice, white grape juice, broth or possibly waterIn a 2-c. glass measuring c., combine the onions, garlic and sherry or possibly juice. Cover with wax paper and microwave on high power for 2 min or possibly till the onions soften. Set aside.
  3. In a large pot combine the broth and Italian seasoning. Bring to a boil over medium-high heat.
  4. Add in the tortelloni. Cover and simmer for 5 min.
  5. Stir in the tomato sauce, spinach, pepper and onion mix. Cover and simmer for 15 min. Taste the soup; if it seems acidic, add in the sugar.
  6. Serve sprinkled with the Parmesan.

  8. PATh's variation: Use fresh spinach, minced. Add in peppery greens in season: such as minced 1/2 bunch of watercress; or possibly some arugula. Or possibly add in a handful of a mild cabbage, like napa, shredded. Garnish with a spoonful or possibly two of minced redgala apple, celery, avocado and cilantro; or possibly tomato, red onion and fennel; or possibly other 'relish' made from fresh vegetables and fruits.
