- 1 cup flour
- 6oz (180gr) spicy sausage
- 1 tsp chili powder
- 1 tsp dried basil
- 1/2 cup ricotta cheese
- 15oz (450gr) whole tomatoes, chopped, all juices reserved
- 2 cloves garlic, minced
- 1 tsp smoky paprika
- 1 tsp dried basil
- 2 tsp olive oil
- 2 cups flour
- 2 eggs
- 1oz (30gr) cooked or thawed spinach, squeezed dry and chopped
- 1 tbs olive oil
- 1 - 2 tbs water
- Follow the directions for making pasta dough, seperating the spinach and adding with the eggs. Cover and let rest.
- The filling
- 1 chicken breast
- 2 slices (1.5oz, 45gr) Prosciutto, chopped
- 2oz (60gr) mushrooms, trimmed and chopped
- 2 shallots, chopped
- 1 tsp parsley
- 2 tsp oil
- 1/2 cup ricotta cheese
- Poach the chicken breast in 1/2 inch of water in a covered skillet until done, about 10 minutes. Remove and finely chop.
- Sauté shallots and mushrooms in oil until shallots are tender.
- Combine all ingredients for filling, set aside.
- The sauce
- 4oz (125gr) pimento
- 15oz (450gr) whole tomatoes, with juices
- 2 cloves garlic
- 1/2 tsp paprika
- 1 tsp oregano
