%20style,%20the%20spicier,%20the%20better.%3C/p%3E%3Cp%3EI%20also%20don't%20like%20monotony%20in%20food%20and%20therefore,%20I%20tend%20to%20experiment%20with%20different%20recipes%20very%20often.%3C/p%3E%3Cp%3Epsst...However,%20when%20it%20comes%20to%20prawns,%20there%20are%20absolutely%20no%20experiments.%20I%20tend%20to%20alternate%20between%20two%20recipes.%20This%20spicy%20prawn%20curry%20is%20my%20favourite;%20I've%20been%20having%20it%20for%20as%20long%20as%20I%20can%20remember%20and%20needless%20to%20say,%20it%20is%20the%20one%20I%20make%20most%20often.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMarinate%20the%20prawns%20in%20a%20little%20turmeric%20powder%20and%20juice%20of%20half%20a%20lemon%20for%20about%2030%20mins.%3C/p%3E%3Cp%3EHeat%20about%20a%20tbsp%20of%20oil,%20add%20the%20half%20the%20curry%20leaves%20followed%20by%20the%20prawns.%20Fry%20for%20about%202%20mins%20or%20till%20the%20prawns%20turn%20white%20in%20colour.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20the%20same%20pan,%20heat%20the%20remaining%20oil.%20Add%20the%20balance%20curry%20leaves%20and%20the%20garlic.%20Fry%20for%20a%20minute%20and%20then%20add%20the%20onions,%20ginger%20and%20the%20green%20chillies,%20stirring%20constantly%20till%20the%20onions%20turn%20pink.%3C/p%3E%3Cp%3ENow,%20toss%20in%20the%20tomatoes%20and%20fry%20till%20they%20become%20soft%20and%20mushy.%20Stir%20in%20the%20remaining%20turmeric,%20coriander%20seed%20powder,%20red%20chilli%20powder%20and%20salt%20and%20then%20tip%20in%20the%20prawns.%20Increase%20the%20heat%20to%20high%20and%20keep%20stirring%20constantly%20and%20briskly%20till%20the%20prawns%20are%20firm%20but%20cooked.%3C/p%3E%3Cp%3E(don't%20over%20cook%20the%20prawns,%20that%20will%20just%20kill%20the%20taste%20and%20the%20texture!)%3C/p%3E%3Cp%3EAdd%20the%20coconut%20milk,%20once%20it%20starts%20to%20simmer,%20take%20the%20pan%20off%20the%20heat%20and%20stir%20in%20the%20chopped%20coriander%20leaves.%20Cover%20and%20let%20it%20rest%20for%20about%20an%20hour%20before%20serving%20so%20as%20to%20allow%20all%20the%20flavours%20to%20mingle%20together.%3C/p%3E%3Cp%3EServed%20with%20piping%20hot%20rice,%20this%20is%20the%20closest%20you%20can%20get%20to%20culinary%20heaven!%3C/p%3E){kind=link}
