.%3C/p%3E%3Cp%3EI%20made%20these%20in%20standard%20sized%20cupcakes%20and%20mini%20cupcakes.%20Truth%20be%20told%20I%20made%20two%20pans%20of%20mini%20cupcakes%20(24)%20and%20they%20stuck%20to%20the%20pan,%20sad%20yes?%20So,%20I%20made%206%20standard%20sized%20cupcakes.%20The%20recipe%20should%20give%20you%20about%2014%20standard%20sized%20cupcakes%20or%2040-44%20minis.%20Now%20that%20I've%20told%20the%20whole%20truth%20on%20why%20I%20actually%20have%20two%20sizes%20of%20cupcakes%20we%20should%20talk%20about%20the%20recipe.%20The%20original%20recipe%20made%201%20bundt%20cake.%20Feel%20free%20to%20follow%20the%20link%20below%20and%20make%20the%20bundt%20cake.%20I%20bet%20it%20would%20be%20delicious%20that%20way%20too!%20I%20also%20changed%20a%20few%20of%20the%20ingredients,%20not%20to%20many,%20just%20a%20few.%3C/p%3E%3Cp%3EThe%20idea%20is%20that%20all%20of%20the%20members%20are%20assigned%20a%20blog%20(secretly%20of%20course!)%3C/p%3E%3Cp%3Eand%20each%20member%20can%20peruse%20their%20assigned%20blog%20to%20find%20something%20that%20they%3C/p%3E%3Cp%3Ewould%20like%20to%20make,%20or%20several%20things%20to%20make%20in%20the%20future.%20The%20assigned%20blogs%3C/p%3E%3Cp%3Eare%20kept%20completely%20secret%20until%20the%20reveal%20day%20and%20time,%20then%20you%20get%20to%20see%3C/p%3E%3Cp%3Ewho%20had%20your%20blog,%20and%20you%20get%20to%20post%20about%20what%20you%20made%20from%20your%20assigned%3C/p%3E%3Cp%3Eblog.%20It's%20a%20lot%20of%20fun,%20and%20a%20great%20way%20to%20discover%20new%20blogs%20and%3C/p%3E%3Cp%3Erecipes.%3C/p%3E%3Cp%3EI've%20already%20made%20two%20of%20them.%20Of%20course%20I%20made%20the%20Spicy,%20Moist%20Gingerbread,%20but%20I%20also%20made%20the%20Mexican%20Cheese%20Dip.%20I%20really%20liked%20the%20way%20that%20the%20dip%20turned%20out%20but%20it%20is%20definitely%20best%20when%20right%20off%20the%20heat%20(or%20in%20a%20small%20crockpot)%20because%20it's%20a%20thicker%20dip.%20I%20loved%20the%20fresh%20cilantro%20in%20it%20(I%20stirred%20it%20in)%20and%20all%20of%20the%20cheese!%3C/p%3E%3Cp%3EI%20also%20bookmarked%20the%20Baked%20Mushroom%20Stuffed%20Brie%20en%20Croute%20and%20the%20Sweet%20Potato%20Dessert%20Empanadas.%20The%20original%20recipe%20for%20the%20Spicy,%20Moist%20Gingerbread%20uses%20fresh%20grated%20ginger.%20I'm%20sure%20that%20would%20have%20made%20the%20gingerbread%20even%20better,%20I%20just%20forgot%20to%20buy%20it%20at%20the%20store.%20It%20also%20uses%20allspice%20(which%20I%20just%20don't%20keep%20in%20my%20pantry%20for%20no%20good%20reason).%20I%20added%20a%20lemon%20glaze%20to%20the%20gingerbread%20cupcakes%20because%20I%20believe%20it%20adds%20to%20the%20flavor.%20I%20think%20an%20orange%20glaze%20would%20be%20delicious%20too!%20Just%20be%20sure%20not%20to%20put%20to%20much%20of%20the%20glaze%20on%20the%20cupcakes%20because%20the%20sweetness%20could%20overpower%20the%20spicy%20gingerbread.%3C/p%3E%3Cp%3ESpicy,%20Moist%20Gingerbread%3C/p%3E%3Cp%3EYield:%2014%20cupcakes%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20350F.%20Line%20muffin%20pans%20with%2014%20paper%20liners,%20set%20aside.%3C/p%3E%3Cp%3E2.%20In%20%20medium%20sauce%20pan,%20combine%20the%20butter,%20water,%20molasses,%20honey%20and%20brown%20sugar.%20Stir%20frequently%20over%20low%20heat%20until%20the%20butter%20is%20melted%20and%20the%20mixture%20is%20smooth.%20Remove%20from%20the%20heat,%20pour%20into%20a%20medium%20bowl%20and%20set%20aside%20to%20cool%20to%20lukewarm.%3C/p%3E%3Cp%3E3.%20In%20a%20medium%20bowl,%20sift%20together%20the%20flour,%20baking%20soda,%20salt,%20ginger,%20cinnamon,%20and%20cloves.%3C/p%3E%3Cp%3E4.%20When%20the%20molasses%20mixture%20has%20cooled%20to%20lukewarm,%20add%20the%20eggs,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20Add%20the%20milk%20and%20stir%20the%20batter%20to%20combine%20until%20smooth.%20Fold%20the%20dry%20ingredients%20into%20the%20batter%20in%20four%20additions.%3C/p%3E%3Cp%3E5.%20Evenly%20divide%20the%20batter%20between%20the%2014%20paper%20liners,%20bake%2016-18%20minutes%20or%20until%20the%20top%20of%20the%20cake%20springs%20back%20when%20touched%20and%20a%20toothpick%20inserted%20into%20the%20center%20comes%20out%20clean.%20Cool%20for%205%20minutes%20in%20the%20pan%20set%20on%20a%20wire%20rack,%20then%20remove%20from%20the%20pan%20and%20place%20on%20the%20wire%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3E6.%20In%20a%20small%20bowl,%20whisk%20together%20the%20powdered%20sugar%20and%20lemon%20juice%20until%20smooth.%20Drizzle%20over%20the%20cupcakes.%3C/p%3E%3Cp%3ENote:%20The%20cupcakes%20will%20hold%20about%20one%20week%20wrapped%20tightly%20in%20plastic%20(with%20no%20icing)%20in%20the%20refrigerator.%20Return%20to%20room%20temperature%20before%20serving.%3C/p%3E){kind=link}
