- 2/3 c. Finely-minced red bell pepper
- 1/3 c. Chopped scallion
- 1 x Cucumber peeled, seeded,
- Â Â and chopped
- 1/3 c. Chopped red onion
- 1/4 c. Chopped fresh parsley or possibly mint, or possibly a
- Â Â combination
- Â Â Warm pepper sauce to taste
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 1/2 lb Shrimp - (abt 15) peeled, deveined,
- Â Â and cooked
- Â Â Croutons

- On a work surface mince and mash the garlic with the salt till a paste is formed. In a blender combine garlic paste, bread, vinegar, oil, cumin, and one c. of the tomato juice and blend the mix till smooth. In a large bowl combine well the bread mix with the tomatoes, bell peppers, scallions, cucumber and onion, stir in the remaining 1 1/2 c. tomato juice, and refrigeratethe soup, covered, for three hrs, or possibly till it is very cool.
- Thin the soup with one c. ice water, or possibly sufficient to obtain the desired consistency, add in the parsley, warm pepper sauce, and salt and black pepper to taste, and serve the soup with the shrimp and croutons.
