%20They%20are%20not%20resolutions%20or%20anything%20but%20few%3C/p%3E%3Cp%3Ethings%20that%20I%20learnt%20from%20mistakes%20made%20last%20year%20which%20I%20want%20to%20correct%20and%3C/p%3E%3Cp%3Eget%20better%20at%20this%20year%E2%80%A6Opportunities%20that%20I%20missed/lost/foolishly%20did%20not%20take%3C/p%3E%3Cp%3Eup%20last%20year%20which%20I%20want%20to%20this%20year%E2%80%A6.and%20the%20list%20quite%20goes%20on,%20but%20I%20don%E2%80%99t%3C/p%3E%3Cp%3Ethink%20they%20are%20un-doable%20;-)%3C/p%3E%3Cp%3EThis%20year%20I%20want%20to%20also%20include%20several%20different%20cuisines%3C/p%3E%3Cp%3Eto%20my%20list%20of%20recipes.%20I%20love%20trying%20out%20all%20sort%20of%20cuisines%20as%20long%20as%3C/p%3E%3Cp%3Eeverything%20I%E2%80%99m%20eating%20is%20fully%20cooked%E2%80%A6NO%20raw%20sushi%20or%20rare%20cooked%20meat%20for%20me%3C/p%3E%3Cp%3Eplssss!%20And%20I%20do%20cook/experiment%20with%20a%20variety%20of%20cuisines%20at%20home,%3C/p%3E%3Cp%3Ebut%20most%20of%20my%20experiments%20are%20done%20at%20night%20either%20after%20I%20come%20home%20from%20work%3C/p%3E%3Cp%3Eor%20weekend%20dinners,%20so%20photographing%20them%20is%20a%20challenge.%20I%E2%80%99m%20trying%20to%20find%20a%3C/p%3E%3Cp%3Esolution%20to%20this%20as%20living%20in%20Minnesota,%20especially%20during%20winters,%20getting%3C/p%3E%3Cp%3Eenough%20light%20after%203pm%20can%20be%20a%20challenge%20and%20I%20want%20to%20be%20able%20to%20click%3C/p%3E%3Cp%3Ewhenever%20I%20want%20and%20not%20just%20when%20the%20dear%20Sun%20decides%20to%20show%20up.%20So%20that%E2%80%99s%3C/p%3E%3Cp%3Eone%20or%20two%20agendas%20on%20my%20list.%3C/p%3E%3Cp%3EAnyways,%20enough%20of%20my%20ramblings%20for%20today.%20Today%E2%80%99s%20dish%20is%20a%3C/p%3E%3Cp%3Esimple,%20quick%20to%20cook%20and%20yummy%20to%20eat%20naadan%20(homestyle)%20Beef%20curry.%20I%20don%E2%80%99t%20cook%20much%3C/p%3E%3Cp%3Ebeef%20or%20pork%20at%20home,%20though%20we%20eat%20them%20at%20restaurants%20etc,%20we%20are%20more%20of%20the%3C/p%3E%3Cp%3Echicken%20and%20fish%20eaters%20at%20home,%20but%20occasionally%20I%20do%20buy%20beef%20and%20I%20like%3C/p%3E%3Cp%3Ecooking%20them%20in%20our%20typical%20Kerala%20style%20preparations%20with%20roasted%20spices%20and%3C/p%3E%3Cp%3Ecoconut%20slices%20%20and%20to%20make%20it%20a%20teeny%3C/p%3E%3Cp%3Ebit%20healthier%20I%20added%20lots%20of%20baby%20spinach.%3C/p%3E%3Cp%3EI%20prefer%20to%20buy%20the%20stew%20cut%20meat%3C/p%3E%3Cp%3Eas%20they%20cook%20easily%20and%20are%20soft.%20And%20a%20pressure%20cooker%20makes%20life%20so%20much%3C/p%3E%3Cp%3Eeasier%20:-)%3C/p%3E%3Cp%3EThe%20Beef%20curry%20is%20spicy%20and%20flavorful,%20go%20ahead%20and%20check%20out%20the%20recipe%3C/p%3E%3Cp%3EKerala%3C/p%3E%3Cp%3Estyle%20Beef%20curry%20with%20Spinach%3C/p%3E%3Cp%3EYou%E2%80%99ll%3C/p%3E%3Cp%3Eneed%3C/p%3E%3Cp%3EStew%3C/p%3E%3Cp%3Euntil%20coconut%20slices%20are%20mildly%20brown.%3C/p%3E%3Cp%3E2.%20%20Add%20Ginger-Garlic-Green%20chillies%20and%20saut%C3%A9%20for%20a%20minute,%20then%20add%20Red%20Onions,%20a%3C/p%3E%3Cp%3Epinch%20of%20salt%20and%20cook%20until%20the%20Onions%20soften.%3C/p%3E%3Cp%3E3.%20%20Add%20tomatoes%20and%20saut%C3%A9%20again%20for%20a%20minute.%3C/p%3E%3Cp%3E4.%20%20Add%20all%20the%20spice%20powders:%20Red%20chilli%20powder,%20Corriander%20powder,%20Garam%20masala,%3C/p%3E%3Cp%3ETurmeric%20powder,%20Black%20pepper%20powder%20and%20enough%20salt%20and%20mix%20and%20cook%3C/p%3E%3Cp%3Eeverything%20until%20the%20raw%20smell%20of%20the%20spices%20wear%20off%20(2%20mins)%3C/p%3E%3Cp%3E5.%20%20Mix%20in%20the%20beef%20and%20enough%20water%20as%20per%20gravy%20required%20(I%20added%20%C2%BC%20cup%20water)%20and%3C/p%3E%3Cp%3Ecover%20the%20pressure%20cooker,%20put%20on%20the%20whistle%20and%20cook%20for%203-4%20whistle%20blows.%3C/p%3E%3Cp%3E6.%20%20Turn%20off%20the%20heat%20and%20let%20the%20pressure%20cooker%20cool%20down%20and%20then%20remove%20the%3C/p%3E%3Cp%3Ewhistle%20and%20open%20the%20cooker.%20Add%20the%20baby%20spinach%20and%20mix%20everything.%20Garnish%3C/p%3E%3Cp%3Ewith%20coriander%20leaves%20if%20desired.%3C/p%3E%3Cp%3E1.%20You%3C/p%3E%3Cp%3Ecould%20use%20Ginger-Garlic%20paste%20instead%20of%20fresh%20ginger%20&%20garlic.%3C/p%3E%3Cp%3E2.%3C/p%3E%3Cp%3EIf%20using%20regular%20raw%20spinach,%20saut%C3%A9%20it%20separately%20in%20a%20pan%20and%20add%20it%20to%20the%3C/p%3E%3Cp%3Ebeef.%20Baby%20spinach%20can%20be%20eaten%20raw%20so%20it%20doesn%E2%80%99t%20matter%20if%20included%20without%3C/p%3E%3Cp%3Ecooking%20it%20separately.%3C/p%3E%3Cp%3E3.%20I%20prefer%20a%20thick%20gravy%20so%20added%20only%20%C2%BC%20cup%20water,%20you%20can%20add%20more%20if%20you%20want%20a%20runny%20gravy%20but%20note%20that%20the%20beef%20will%20release%20a%20bit%20of%20moisture%20while%20cooking%20which%20adds%20to%20the%20gravy%20content.%3C/p%3E%3Cp%3E4.%20I%20use%20Kashmiri%20Red%20Chilli%20powder%20which%20is%20milder%20in%20spice%20but%20gives%20a%20gorgeous%20reddish-brown%20color%20to%20your%20dish.%3C/p%3E%3Cp%3ELook%20at%20that%20lush%20gravy...yumm!%20We%20ate%20this%20with%20some%20kerala%20matta%20rice,%20beetroot%20thoran%20and%20moru%20curry%20and%3C/p%3E%3Cp%3Eit%20was%20a%20quick%20and%20yummy%20lunch.%20But%20the%20curry%20pairs%20very%20well%20even%20with%20Appam,%20Idiappam,%20Chapathi,%20Porotta,%20Naan,%20Basmati%20rice...even%20bread%20etc.%3C/p%3E%3Cp%3EMy%20lil%E2%80%99one%20wasn%E2%80%99t%20very%20keen%20on%20trying%20the%20spicy%3C/p%3E%3Cp%3Edish%20but%20I%20hope%20he%20will%20develop%20a%20taste%20to%20it%20as%20he%20grows%20:-)%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
