%20Serve%20with%20the%20lemon,%20coriander%20and%20parsley,%20though%20I%20forgot%20the%20lemon%20and%20not%20very%20keen%20on%20parsley%20so%20just%20the%20coriander%20for%20us!%3C/p%3E%3Cp%3EThe%20picture%20isn't%20pretty%20but%20it%20tasted%20good!%3C/p%3E%3Cp%3ELamb%20Kofta%3C/p%3E%3Cp%3EI%20used%20this%20recipe%20from%20BBC%20food%20site,%20minor%20amendments%20were%20that%20I%20used%20smoked%20paprika%20instead%20of%20the%20paprika%20and%20also%20added%20some%20finely%20chopped%20fresh%20mint%20leaves,%20as%20I%20just%20love%20the%20combination%20together!%3C/p%3E%3Cp%3EFor%20the%20lamb%20kofta%20kebabs%3C/p%3E%3Cp%3E500g/17%C2%BDoz%20lean%20minced%20lamb%3C/p%3E%3Cp%3E3%20tsp%20paprika%3C/p%3E%3Cp%3E2%20tsp%20ground%20coriander%3C/p%3E%3Cp%3E2%20tsp%20ground%20cumin1%20clove%20garlic,%20peeled,%20chopped%3C/p%3E%3Cp%3E%C2%BD%20chilli,%20finely%20chopped%3C/p%3E%3Cp%3Epinch%20cayenne%20pepper%3C/p%3E%3Cp%3Esalt%20and%20freshly%20ground%20black%20pepper,%20to%20taste%3C/p%3E%3Cp%3EPreheat%20the%20grill%20to%20high.%20(not%20too%20high%20though%20unless%20you%20want%20a%20very%20smoky%20kitchen!)%3C/p%3E%3Cp%3EPlace%20all%20of%20the%20kebab%20ingredients%20together%20in%20a%20bowl%20and%20mix%20together%20with%20your%20hands%20until%20the%20meat%20sticks%20together.%3C/p%3E%3Cp%3EWith%20damp%20hands,%20take%20a%20handful%20of%20the%20kebab%20mixture%20and%20shape%20into%20a%20long%20sausage%20shape%20around%20a%20metal%20skewer.%20Repeat%20with%20the%20remaining%20kebab%20mixture,%20using%20a%20new%20skewer%20each%20time%20(or%20fit%20two%20kebabs%20onto%20each%20skewer,%20if%20space%20allows).%3C/p%3E%3Cp%3EPlace%20the%20skewers%20under%20the%20grill%20for%2010-12%20minutes,%20turning%20them%20halfway,%20until%20the%20lamb%20is%20golden-brown%20and%20cooked%20through.%20Slide%20the%20kebabs%20off%20the%20skewers%20serve.%3C/p%3E%3Cp%3ESpinach%20Pilaf%3C/p%3E%3Cp%3ENot%20sure%20why%20I%20haven%E2%80%99t%20blogged%20this%20one%20before%20but%20I%20also%20cooked%20this%20lovely%20simple%20rice%20dish,%20just%20without%20the%20lamb%20addition%20this%20time%20as%20we%20were%20already%20having%20the%20lamb%20koftas,%20however%20I%20can%20recommend%20the%20whole%20recipe%20for%20a%20simple%20and%20tasty%20mid-week%20dinner!%3C/p%3E%3Cp%3E4%20cardamom%20pods%20,%20lightly%20crushed%3C/p%3E%3Cp%3E100g%20spinach%20,%20washed%20and%20chopped%3C/p%3E%3Cp%3EHeat%201%20tbsp%20olive%20oil%20in%20a%20pan,%20add%20the%20onion%20and%20garlic%20and%20cook%20for%205%20minutes%20until%20softened%20then%20stir%20in%20the%20spices%20and%20rice.%20Pour%20over%20the%20stock,%20bring%20to%20a%20simmer%20and%20cover%20with%20a%20tight-fitting%20lid.%3C/p%3E%3Cp%3ETurn%20the%20heat%20down%20and%20cook%20gently%20until%20all%20the%20stock%20has%20been%20absorbed,%20about%2015%20minutes.%20Stir%20through%20the%20spinach%20for%20the%20last%20minute%20of%20cooking%20until%20wilted.%3C/p%3E%3Cp%3EHere%20is%20a%20picture%20of%20my%20plate%20loaded%20up%20with%20everything!%3C/p%3E%3Cp%3EAnd%20if%20you%20are%20anything%20like%20me,%20you%20find%20the%20packet%20of%20pitta%20breads%20in%20the%20bread%20bin,%20after%20dinner%20is%20finished%E2%80%A6%E2%80%A6%3C/p%3E){kind=link}
