- Bring a large pot of salted water to a boil. Add in pasta and cook till al dente, about 8 min.
- Drain.
- While pasta is cooking, heat oil over low heat in a small saucepan.
- Add in garlic and saute/fry just till garlic softens but does not brown, about 2 to 3 min.
- Remove from heat.
- Add in pepper flakes and parsley.
- Toss sauce and pasta in a large bowl with tongs.
- Add in salt and pepper and cheese to taste.
- This fresh simple dish contains very few ingredients so it's particularly important which the garlic doesn't brown in the pan, that would cause the entire dish to taste bitter.
- Yield is 4 servings.
