- 16 ounce Kidney beans, liquid removed and Rinsed
- 1 c. Corn kernels, canned or possibly Frzn
- 1 c. Minced bell peppers, Green or possibly red
- 1 c. Minced tomato
- 1 med Red onion, minced
- 1 x Jalapeno pepper, finely Minced
- 4 Tbsp. Cider vinegar
- 1 Tbsp. Vegetable oil
- 1Â 1/2 tsp Chili pwdr
- 1/8 tsp Sugar
- Â Â Salt, to taste

- One can of pinto beans may be substituted. Drain canned corn; or possibly thaw frzn corn. The jalapeno pepper may be omitted.
- Combine all the vegetables in a medium bowl. In a small bowl, whisk together the vinegar, oil, chili pwdr, sugar and salt (if using it). Pour over the vegetable mix. Cover and refrigeratefor at least a half hour so the flavors will blend.
- Can be refrigerated for 1-2 days ahead if you like. Stir before serving.
