I haven't work in eight days, and I have to say-- I am feeling very rested. My cooking and baking mojo has returned, and bread baking has been going on for the last few days. The bread baking beast inside me has been awakened! Being on "Staycation" has allowed me the luxury of being at home, in no particular hurry to go anywhere.
So, a few days ago, I baked my first Baguettes. My son, who works at a nice restaurant in Carmel (CA) said that I could easily put these in a basket and serve them at a good restaurant. (I think he likes them.) Today, I baked these sourdough sandwich rolls. These made the most delicious ham and cheese sandwiches, and I will share that recipes soon. I promise.

%20said%20that%20I%20could%20easily%20put%20these%20in%20a%20basket%20and%20serve%20them%20at%20a%20good%20restaurant.%20(I%20think%20he%20likes%20them.)%20Today,%20I%20baked%20these%20sourdough%20sandwich%20rolls.%20%20These%20made%20the%20most%20delicious%20ham%20and%20cheese%20sandwiches,%20and%20I%20will%20share%20that%20recipes%20soon.%20I%20promise.%3C/p%3E%3Cp%3EMy%20son%20and%20I%20adore%20sourdough%20bread.%20%20We%20live%20just%20two%20hours%20from%20San%20Francisco.%20Whenever%20I%20go%20to%20The%20City,%20I%20have%20to%20bring%20home%20a%20loaf%20of%20sourdough%20bread%20from%20the%20Boudin%20Bakery.%20So%20good.%20%20To%20me,%20sourdough%20needs%20to%20have%20that%20%22bite%22,%20but%20not%20too%20much.%3C/p%3E%3Cp%3EConfession:%20I%20bought%20a%20sourdough%20starter%20from%20my%20beloved%20King%20Arthur%20Flour%20website.%20According%20to%20KAF,%20this%20starter%20has%20been%20lovingly%20nurtured%20since%20the%201700's.%20%20I%20guess%20I%20shouldn't%20feel%20too%20bad,%20then,%20that%20I%20fed%20my%20sourdough%20starter%20for%20two%20years,%20before%20finally%20using%20it!%20A%20few%20times,%20I%20neglected%20my%20starter,%20and%20though%20I%20had%20ruined%20it.%20But,%20you%20know%20what?%20I%20learned%20that%20a%20starter%20can%20be%20very%20forgiving,%20and%20I%20was%20able%20to%20bring%20it%20back%20to%20life.%20Yes,%20call%20me%20the%20%22Sourdough%20Starter%20Whisperer%22!%3C/p%3E%3Cp%3ELast%20night,%20I%20%22fed%22%20my%20starter.%20%20To%20feed%20a%20sourdough%20starter,%20you%20discard%20one%20cup%20of%20dough,%20and%20then%3C/p%3E%3Cp%3Eadd%20flour%20and%20water%20and%20let%20it%20sit%20at%20room%20temperature%20for%2012%20hours.%20This%20morning,%20it%20was%20a%20beautiful%20sight--%20all%20bubbly%20and%20happy.%3C/p%3E%3Cp%3EI%20hate%20wasting%20good%20ingredients,%20so%20I%20was%20thrilled%20to%20discover%20that%20I%20can%20use%20the%20one%20cup%20of%20discarded%20dough%20to%20make%20sourdough%20pizza%20dough.%20So,%20last%20night,%20I%20placed%20the%20%22discard%22%20into%20a%20covered%20bowl.%20Today,%20I%20removed%20the%20reserved%20starter...%3C/p%3E%3Cp%3EJust%20so%20we%20are%20very%20clear--%20I%20am%20not%20paid%20to%20promote%20King%20Arthur%20Flour.%20I%20just%20love%20their%20products%20and%20customer%20service.%20You%20can%20call%20their%20%22Baker's%20Hot%20Line%22%20and%20get%20professional%20advice,%20too.%20%20I've%20been%20buying%20their%20Pizza%20Dough%20Flavor%20for%20a%20few%20years.%20This%20ingredient%20really%20adds%20some%20extra%20flavor%20to%20any%20pizza%20dough%20recipe.%20To%20the%20reserved%20starter,%20I%20add%20more%20King%20Arthur%20Flour%20all-purpose%20flour,%20hot%20water%20and%20instant%20yeast.%3C/p%3E%3Cp%3EIf%20you've%20been%20reading%20my%20blog%20for%20a%20while,%20you'd%20know%20that%20I%20enjoy%20showing%20step-by-step%20photo%20tutorials%20on%20how%20I%20make%20a%20recipe.%20Well,%20let's%20say%20that%20as%20I%20reached%20for%20my%20camera,%20today,%20I%20had%20butterfingers.%20The%20camera%20hit%20the%20kitchen%20floor%20with%20a%20sickening%20crash.%20My%20lens%20came%20off%20the%20camera%20with%20bits%20of%20broke%20plastic.%20%20I%20hoped%20that%20the%20plastic%20was%20my%20lens%20cap,%20but%20it%20wasn't.%20Sniff.%20The%20camera%20survived,%20but%20the%20lens%20is%20broken.%20%20Not%20the%20glass%20part,%20thank%20goodness,%20but%20the%20macro%20doesn't%20work%20anymore.%20So,%20the%20lens%20is%20being%20shipped%20back%20to%20Canon%20for%20an%20estimate%20that%20I%20hope%20will%20cost%20less%20than%20replacing%20it.%3C/p%3E%3Cp%3ESo,%20here%20we%20are--%20the%20finished%20pizza%20being%20shot%20with%20a%20wide%20angle%20zoom%20lens.%3C/p%3E%3Cp%3EI%20had%20some%20leftover%20marinara%20sauce,%20%20Italian%20sausages,%20sliced%20cremini%20mushrooms,%20an%20opened%20can%20of%20sliced%20black%20olives%20and%20a%20big%20onion.%20%20I%20always%20have%20an%20assortment%20of%20cheeses%20on%20hand,%20so%20I%20use%20a%204-cheese%20combo%20that%20includes%20Asiago%20and%20Provolone.%3C/p%3E%3Cp%3EI%20shaped%20half%20of%20the%20pizza%20dough,%20free-hand%20(still%20don't%20know%20how%20to%20toss%20it%20in%20the%20air),%20and%20added%20the%20cooked%20sausage,%20onion,%20mushrooms%20and%20some%20red%20pepper%20flakes.%20%20I%20simplified%20how%20King%20Arthur%20Flour's%20recipe%20said%20to%20bake%20the%20pizza.%20%20Until%20my%20new%20pizza%20peel%20arrives,%20I%20place%20parchment%20paper%20on%20an%20inverted%20baking%20sheet.%20I%20didn't%20prebake%20the%20crust,%20because%20my%20baking%20stone%20gets%20heated%20at%20450F%20and%20has%20eliminated%20any%20%22soggy%20pizza%20crust%22%20syndrome.%3C/p%3E%3Cp%3EIn%20fact,%20once%20I%20shaped%20the%20dough,%20I%20only%20let%20it%20rise%20for%20about%2010%20minutes%20(covered).%20%20By%20lining%20up%20the%20inverted%20baking%20sheet%20to%20the%20preheated%20baking%20stone,%20I%20use%20tongs%20to%20grab%20the%20parchment%20paper%20and%20to%20slide%20the%20unbaked%20pizza%20onto%20the%20stone.%20It%20
