- 1 pound grnd beef
- 1 (15 ounce.) can pinto beans, liquid removed
- 1 (10 ounce.) can warm enchilada sauce
- 1 (8 ounce.) can tomato sauce
- 1 c. shredded sharp American cheese (4 ounce.)
- 1 tbsp. instant chopped onion
- 1 (6 ounce.) pkg. corn chips
- 1 c. dairy lowfat sour cream
- 1/2 c. shredded sharp American cheese (2 ounce.)

- In skillet, brown grnd beef; drain off fat. Stir in liquid removed beans, enchilada sauce, tomato sauce, 1 c. shredded cheese and instant chopped onion. Set aside 1 c. corn chips; coarsely crush remaining chips. Stir crushed chips into meat mix. Turn into a 1 1/2 qt casserole. Bake, covered at 375 degrees for 30 min. Spoon lowfat sour cream atop casserole; sprinkle with the 1/2 c. cheese. Sprinkle reserved chips around edge of casserole. Bake uncovered for 2 to 3 min. Makes 6 servings.
