- 1 c. Soft bread cubes
- 1/4 c. Lowfat milk
- 1/2 lb Lean grnd beef
- 1/2 lb Homemade chorizo
- 1 x Egg
- Â Â Salt, pepper and seasoning
- Â Â To taste
- Â Â Oregano, basil and rosemary
- Â Â Fresh in season
- 1 c. Diced celery
- 1 x Onion -- diced
- 3 x Carrots -- minced
- 1/2 c. Coarsely minced cilantro
- 2 c. Sliced zucchini
- 2Â 1/2 c. Beef broth
- 1 c. Red wine
- 28 ounce Canned whole tomatoes
- 2 med Potatoes -- diced medium
- 3 x Cloves chopped garlic

- 1. Combine bread cubes and lowfat milk and mix with grnd beef, chorizo, egg and some salt. Refrigeratefor at least 30 minutes.
- 2. Combine everything else in a large soup pot and bring to a boil. Cover and reduce to simmer, and cook about 15 min.
- 3. Shape meat mix into about 16 or possibly more meatballs.
- Add in to soup, cover and cook on simmer for 45 min, or possibly till meat is done. I always serve with rice, hot flour tortillas, or possibly just French bread.
