  • 1/4 c. Greek olives, minced
  • 1 tsp Extra virgin olive oil
  • 1/4 c. Feta cheese,grated
  • 2 Tbsp. Parmesan cheese grated
  • 1 c. Garlic, mashed
  • 1 Tbsp. Lemon juice,fresh
  • 1 x Just made recipe for soft polenta
  •     Omitting the gorganzola cheese

  1. Stir the olives, oil, feta, Parmesan, garlic and lemon into the warm polenta. Serve hot in shallow bowls, accompanied by a salad of interesting greens. Sauteed dark leafies like kale and chard are also a tasty side dish for the polenta.
