%3C/p%3E%3Cp%3EHowever,%20given%20that%20I%20have%20been%20known%20to%20candy%20bacon%20and%20salt%20the%20bejaysus%20out%20of%20my%20cookies,%20that%20doesn't%20happen%20as%20often%20as%20I'd%20like%20here%20in%20Ninjaville.%3C/p%3E%3Cp%3EBut%20I've%20got%20one%20for%20you%20today:%20a%20recipe%20that%20makes%20three%20dozen%20delightfully%20yummy%20lemon%20cookies%20but%20uses%20only%20four%20measly%20tablespoons%20of%20butter.%3C/p%3E%3Cp%3EHuzzah!%3C/p%3E%3Cp%3EThese%20lemon%20cookies%20were%20originally%20pitched%20in%20Eating%20Well%20magazine%20as%20a%20Christmas%20cookie.%3C/p%3E%3Cp%3ESay%20what?%3C/p%3E%3Cp%3EYeah,%20I%20bet%20that%20idea%20didn't%20fly%20that%20well%20with%20anyone%20else%20either,%20since%20the%20cookies%20just%20showed%20up%20recently%20in%20a%20%22best%20of%20summer%22%20supplement.%3C/p%3E%3Cp%3EClever,%20clever%20editors.%3C/p%3E%3Cp%3EWell,%20the%20holidays'%20loss%20is%20our%20gain,%20as%20these%20cookies%20fairly%20ooze%20sunny%20summery%20goodness.%20I%20much%20prefer%20a%20soft%20cookie%20to%20a%20crunchy%20one%20and%20these%20have%20the%20perfect%20amount%20of%20center%20softness.%20The%20taste%20is%20reminiscent%20of%20a%20lemon%20bar,%20without%20the%20crumbliness.%3C/p%3E%3Cp%3EThey%20will%20look%20a%20bit%20underdone%20when%20they%20come%20out%20of%20the%20oven%20but%20that's%20what%20helps%20them%20retain%20not%20only%20their%20softness%20but%20also%20their%20lovely%20sunny%20color.%20If%20you%20think%20they're%20too%20soft%20for%20you,%20feel%20free%20to%20bake%20them%20another%20minute%20but%20I%20wouldn't%20advise%20leaving%20them%20any%20longer%20than%20that.%3C/p%3E%3Cp%3EThey'll%20run%20the%20risk%20of%20becoming%20an%20ordinary%20lemon%20cookie.%3C/p%3E%3Cp%3EAnd%20we%20don't%20do%20ordinary,%20do%20we?%20Not%20in%20Ninjaville.%3C/p%3E%3Cp%3ESo,%20do%20you%20have%20any%20favorite%20summer%20cookie%20recipes%20you'd%20like%20to%20share%20with%20me?%3C/p%3E%3Cp%3ESoft%20Lemon%20Cookies%20(adapted%20from%20Eating%20Well%20magazine)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20first%20four%20ingredients%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20stand%20mixer,%20cream%20together%20the%20butter%20and%20sugar.%20Add%20the%20egg,%20honey,%20zests%20and%20lemon%20juice%20and%20mix%20until%20blended.%20Add%20the%20dry%20mixture%20and%20beat%20until%20combined.%20Cover%20the%20dough%20and%20refrigerate%20it%20for%20at%20least%2030%20minutes%20(I%20left%20mine%20for%20about%206%20hours).%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20375%20degrees.%3C/p%3E%3Cp%3ERoll%20the%20dough%20into%20small%20balls%20(roughly%202-3%20teaspoons%20worth%20of%20dough)%20and%20place%20them%20several%20inches%20apart%20on%20parchment-lined%20baking%20sheets.%20Bake%20one%20sheet%20at%20a%20time%20for%20about%208%20minutes%20or%20until%20beginning%20to%20crackle.%20Remove%20from%20the%20oven,%20let%20cool%20for%20a%20few%20minutes%20on%20the%20sheets%20then%20transfer%20to%20wire%20racks%20to%20cool%20completely.%3C/p%3E%3Cp%3EMakes%20about%203%20dozen%20cookies.%3C/p%3E){kind=link}
