%20%20not%20only%20for%20our%20enjoyment%20but%20theirs%20as%20well.%20Oh%20yeah,%20now%20they%20new%20how%20to%20cook.%20In%20our%20household,%20on%20occasion,%20we%20were%20entertained%20with%20Emma%20Lee,%20daughter%20of%20Annie%20Bell%20who%20was%20my%20grandmother's%20permanent%20kitchen%20entertainer.%20I%20use%20the%20word%20'entertainer'%20because%20never%20did%20a%20day%20go%20by%20that%20a%20funny,%20entertaining%20fiasco%20occur.%20Emma%20Lee%20enjoyed%20acting%20up%20to%20the%20more%20modern%20likes%20of%20Redd%20Foxx%20or%20George%20Kirby%20and%20singing%20Marvin%20Gaye%20while%20Annie%20Bell%20was%20happy%20gyrated%20to%20the%20tunes%20of%20Etta%20James%20and%20James%20Brown,%20all%20while%20frying%20some%20of%20the%20best%20crusted%20chicken%20I%20have%20ever%20known.%20She%20is%20the%20one%20who%20taught%20me%20how%20to%20cook%20Green%20Beans%20and%20New%20Potatoes%20along%20with%20so%20many%20other%20tricks%20in%20southern%20cookery.%20And%20not%20only%20could%20she%20sing,%20she%20could%20shake%20a%20tail-feather%20too.%20Now%20all%20this%20went%20on%20mind%20you%20while%20we%20young'uns%20were%20'helping%20out'%20and%20while%20the%20elders%20were%20off%20doing,%20well%20their%20elderly%20things.%20And%20if%20things%20got%20broken%20while%20'helping%20out',%20well,%20we%20of%20course%20took%20the%20blame%20even%20though%20never%20was%20that%20believable.%3C/p%3E%3Cp%3EI%20mention%20all%20of%20this%20only%20because%20the%20essence%20of%20this%20'dish'%20comes%20from%20the%20hands%20of%20folks%20that%20knew%20how%20to%20really%20cook%20what%20is%20known%20as%20'soul%20food.'%20Yes,%20James%20Brown%20had%20soul,%20no%20doubt%20about%20that,%20but%20somehow,%20I%20never%20made%20the%20connection%20to%20the%20foods%20until%20recently.%20I%20have%20always%20understood%20the%20relation%20of%20African-American%20cuisine%20to%20the%20meager%20ingredients%20available%20to%20the%20slave%20and%20sharecropper%20black%20families%20of%20that%20dark%20period%20of%20time,%20of%20folks%20trying%20to%20balance%20a%20simple%20to%20cook%20yet%20hearty%20meal%20of%20what%20ever%20became%20available%20into%20something%20nutritious%20.%20Being%20southern,%20that%20is%20one%20of%20many%20things%20that%20was%20taught%20to%20us%20by%20my%20mother.%20Back%20in%20the%20day,%20finding%20good%20food%20to%20eat%20was%20hard%20to%20come%20by%20and%20meager%20ingredients%20often%20made%20a%20meal%20in%20order%20for%20survival.%20To%20me,%20to%20put%20it%20in%20context,%20the%20term%20'soul%20food'%20means%20eating%20and%20nourishing%20the%20body%20so%20that%20your%20soul%20has%20a%20chance%20of%20survival.%20Today%20may%20be%20a%20little%20different,%20yet%20we%20see%20the%20term%20used%20more%20often%20as%20'food%20for%20the%20soul'%20and%20thanks%20to%20churches,%20shelters%20and%20food%20kitchens,%20feeding%20the%20souls%20of%20many%20who%20have%20no%20way%20of%20obtaining%20food%20to%20survive%20is%20a%20generous%20act%20all%20of%20us%20should%20support.%3C/p%3E%3Cp%3E16%20%25%20of%20Americans%20are%20at%20risk%20of%20hunger!%3C/p%3E%3Cp%3ELess%20than%20three%20weeks%20away,%20the%20weekend%20of%20Mother's%20Day%20in%20fact,%20is%20the%20National%20Association%20of%20Letter%20Carriers%20Stamp%20Out%20Hunger%20Food%20Drive.%20I%20urge%20everyone%20to%20start%20today%20in%20putting%20away%20non-perishable%20foodstuff%20for%20the%20drive%20and%20remember,%20all%20donations%20go%20directly%20to%20local%20food%20banks,%20pantries%20and%20shelters.%20Watch%20for%20the%20bags%20or%20make%20a%20drop-off.%3C/p%3E%3Cp%3ENow%20for%20the%20recipe%20.%20.%20.%20Enjoy!%3C/p%3E%3Cp%3ESmothered%20Collard%20Greens%3C/p%3E%3Cp%3Esort%20of%20like%20Annie%20Belle%20used%20to%20make%3C/p%3E%3Cp%3Emakes%206-8%20servings%3C/p%3E%3Cp%3ERinse%20greens%20underwater%20in%20a%20deep%20sink%20if%20possible%20allowing%20grit%20to%20settle%20to%20bottom.%20Remove%20greens%20and%20drain%20water%20rinsing%20away%20the%20grit.%20Repeat%20until%20no%20trace%20of%20grit%20remains.%20Remove%20the%20thick%20stems%20and%20discard%20any%20blemished%20leaves.%20Rough%20chop%20collards%20and%20put%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20stockpot,%20cook%20bacon%20until%20crisp.%20Remove%20bacon%20with%20slotted%20spoon%20to%20a%20paper%20lined%20plate.%20Remove%20all%20but%203%20tablespoons%20of%20bacon%20grease%20from%20the%20pot%20and%20reserve%20remaining%20for%20later%20use.%20Add%20butter%20to%20pot%20with%20the%20bacon%20renderings%20and%20when%20melted,%20add%20onion%20and%20jalapeno.%20Saute%20until%20onion%20is%20soft.%20Add%20a%20handful%20of%20collards%20at%20a%20time%20tossing%20all%20while%20cooking%20until%20the%20greens%20are%20wilted.%20Add%20the%20chicken%20stock%20and%20season%20with%20salt%20and%20pepper%20to%20taste.%20Simmer%20covered%20on%20medium%20low%20until%20tender,%20about%2010%20minutes.%20Remove%20cover,%20add%20the%20vinegar,%20stir%20and%20continue%20simmering%20out%20most%20of%20the%20liquid,%20about%2030%20minutes.%20Do%20not%20allow%20collards%20to%20scorch.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%20Grease%20a%203-quart%20casserole%20dish%3C/p%3E%3Cp%3EMeanwhile,%20make%20the%20sauce%20which%20is%20a%20basic%20white%20milk%20gravy%20using%20the%20bacon%20fat%20for%20flavor.%20Add%20the%20grease%20to%20a%20saucepan%20over%20medium%20low%20heat,%20whisk%20in%20the%20flour%20until%20smooth%20and%20when%20bubbly,%20slowly%20whisk%20in%20the%20milk%20stirring%20until%20a%20medium%20thick%20sauce%20is%20achieved.%20Season%20with%20salt%20and%20pepper%20and%20remove%20from%20heat.%3C/p%3E%3Cp%3EWhen%20the%20collards%20are%20cooked%20and%20most%20all%20liquid%20is%20cooked%20out,%20place%20into%20a%20colander%20and%20allow%20to%20drain%20thoroughly%20pressing%20with%20the%20backside%20of%20a%20large%20spoon%20if%20necessary%20to%20squeeze%20out%20the%20liquid.%20Spoon%20into%20the%20casserole%20and%20spoon%20the%20sauce%20on%20top.%3C/p%3E%3Cp%3ECover%20with%20foil%20and%20bake%20for%20about%2020%20minutes%20or%20until%20sauce%20is%20bubbly%20and%20has%20melding%20into%20the%20greens.%20Remove%20and%20sprinkle%20with%20the%20crisp%20bacon%20before%20serving.%3C/p%3E%3Cp%3EThank%20you%20%20Annie%20Bell%20for%20allowing%20me%20to%20'help%20out'.%3C/p%3E){kind=link}
