- 1 lb sliced crimini mushrooms
- 1 sweet bell pepper, chopped
- 3 medium-large tomatoes, chopped (and peeled if desired)
- 3 medium russet potatoes, peeled and chopped into chunks
- 8 small Yukon Gold potatoes, chopped into chunks
- ⅔ cup yellow split peas
- 4 cups low sodium beef stock
- 4 cups water
- 1 recipe tarka (see below)
- 2-3 cups frozen peas, for garnish
- 1-2 T ghee
- 2 t cumin seeds
- ½ t salt, divided
- 2 T double concentrated tomato paste (use ¼ cup traditional)
- 1 t curry powder
