- 12 fully-cooked frozen meatballs (store-bought or homemade)
- 2 T butter, softened
- 12 small buns or dinner rolls (such as Hawaiian rolls)
- 6 slices American cheese

.%20My%20young,%20vivacious%20look-a-like%20has%20some%20very%20particular%20ways%20of%20doing%20things.%20Ponytails%20are%20acceptable,%20but%20braids%20are%20not.%20Books%20are%20fun%20but%20not%20if%20Mom%20picks%20them%20out%20(she%20will%20not%20read%20A%20Little%20Princess%20no%20matter%20how%20good%20I%20tell%20her%20it%20is).%20Swimming%20is%20awesome%20until%20someone%20gets%20water%20in%20her%20face.%20The%20list%20goes%20on%20and%20on.%3C/p%3E%3Cp%3EIt%E2%80%99s%20no%20different%20with%20food.%20Spaghetti%20is%20always%20welcome%20but%20not%20lasagna.%20Quiche%20is%20one%20of%20her%20favorites,%20but%20she%20won%E2%80%99t%20touch%20an%20omelet.%20And%20as%20far%20as%20fish%20goes,%20it%E2%80%99s%20salmon%20or%20nothing!%20So,%20you%20can%20imagine%20my%20frustration%20at%20the%20fact%20that%20she%20is%20vehemently%20against%20sloppy%20joes,%20even%20though%20a%20sloppy%20joe%20contains%20all%20of%20her%20favorite%20food%20groups;%20ketchup,%20hamburger,%20and%20sugar!%20I%20for%20one%20am%20a%20huge%20fan%20of%20the%20sloppy%20joe.%20It%E2%80%99s%20a%20quick%20and%20easy%20dinner%20that%20isn%E2%80%99t%20tacos%20(her%20other%20favorite%20food,%20but%20only%20in%20a%20crunchy%20shell%20not%20soft%20shell)%20and%20it%E2%80%99s%20one%20of%20my%20personal%20childhood%20favorites.%20So%20when%20my%20husband%20talked%20my%20daughter%20into%20trying%20(and%20LOVING!)%20a%20meatball%20sub%20a%20few%20weeks%20ago,%20I%20knew%20I%20could%20somehow%20use%20this%20to%20my%20advantage.%3C/p%3E%3Cp%3EAnd%20so%20the%20Sloppy%20Meatball%20Joe%20was%20born.%20%20It%20has%20all%20of%20the%20sloppy%20joe%20flavor%20that%20every%20red-blooded%20American%20knows%20and%20loves%20in%20a%20meatball%20sandwich%20form.%20Of%20course,%20by%20using%20a%20stash%20of%20my%20frozen%20meatballs,%20it%20comes%20together%20super-fast.%20Most%20importantly%20though,%20it%E2%80%99s%20daughter-approved.%3C/p%3E%3Cp%3ESloppy%20Meatball%20Joes%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%20the%20olive%20oil%20over%20medium%20heat.%20Saute%20onions%20for%204-5%20minutes%20or%20until%20tender.%20Add%20in%20the%20garlic%20and%20saute%20for%20another%20minute.%20Stir%20in%20the%20ketchup,%20water,%20brown%20sugar,%20chili%20powder%20and%20mustard%20powder.%20Bring%20to%20a%20simmer%20and%20add%20in%20the%20frozen%20meatballs.%20Cover%20the%20skillet%20and%20reduce%20the%20heat%20to%20low%20and%20cook%20until%20meatballs%20are%20heated%20all%20the%20way%20through.%3C/p%3E%3Cp%3EMeanwhile,%20split%20the%20rolls%20in%20half%20and%20butter%20each%20side.%20Place%20the%20rolls%20on%20a%20baking%20sheet%20and%20toast%20briefly%20in%20the%20oven,%20until%20the%20rolls%20are%20hot%20and%20just%20beginning%20to%20brown.%3C/p%3E%3Cp%3ETo%20assemble:%20Place%20a%20meatball%20on%20top%20of%20the%20bottom%20half%20of%20each%20roll,%20making%20sure%20to%20spoon%20a%20little%20sauce%20on%20top%20of%20each%20one.%20Top%20with%20half%20a%20slice%20of%20cheese%20and%20the%20top%20half%20of%20the%20roll.%20Serve%20and%20enjoy!%3C/p%3E%3Cp%3ETip:%20This%20would%20work%20great%20in%20a%20crockpot!%20Simply%20mix%20up%20the%20sauce%20and%20add%20it%20to%20the%20crockpot%20with%20the%20meatballs%20and%20heat%20on%20LOW%20for%202-4%20hours.%3C/p%3E%3Cp%3E3.1%3C/p%3E%3Cp%3Ehttp://eatinonthecheap.com/2015/06/12/sloppy-meatball-joes/%3C/p%3E){kind=link}
