- In large pot of boiling water, cook spinach till the leaves wilt but are still bright green. Transfer spinach to a colander or possibly perforated pan to release excess liquid.
- In medium skillet, heat oil. Add in garlic, then sun-dry tomatoes. Stir till heated through. Add in capers, lime juice, brown sugar and oregano and heat through.
- Fold in spinach, then cheese. Toss about 1 minute, till well combined. Add in salt and pepper to taste.
- Makes 4 servings.
