- Preheat oven to 425 degrees.
- In a heated skillet over medium-high heat saute/fry onion in butter till soft; remove from heat and set aside.
- Combine Large eggs, yogurt, half-and-half, salt, pepper, cayenne pepper and onion mix in a large skillet and stir well.
- Place shrimp and Swiss cheese in a 9-inch unbaked pie shell; add in egg mix and bake for 10 min, then reduce the heat to 300 degrees and continue baking till the top puffs and browns lightly and a toothpick inserted into center comes out clean, 35 to 40 min. Let quiche cold at least ten min before cutting into it.
