- 1/4 c. uncooked rice
- 1/2 c. water
- 1/4 teaspoon salt
- 2 med. sized green peppers, cored & seeded
- 1 (4 ounce.) can shrimp, liquid removed & rinsed
- 1/3 c. mayonnaise
- 1 tbsp. onion, minced
- 2 drops warm sauce
- 2 tbsp. cracker crumbs
- 1 tbsp. butter, melted

- Combine rice, water and salt in saucepan, bring to a boil. Cover, reduce heat and simmer 17 to 20 min. Remove from heat, set aside. Cook green peppers in boiling salted water 5 min, drain. Set aside 2 shrimp. Combine, rice, remaining shrimp, mayonnaise, onion and warm sauce; mix well. Spoon into peppers, place in an 8 1/2 x 4 1/2 x 3 inch loaf pan. combine cracker crumbs and butter; mix well. sprinkle on peppers; bake uncovered at 350 degrees for 30 min. Garnish with reserve shrimp. Yield: 2 servings. Easy to double.
