..Its%20the%20funky%20time%20of%20the%20year..summer,vacations,kids%20at%20home,guests%20n%20friend%20pouring%20in,grills,picnic's,barbecue%E2%80%99s,parties%20n%20what%20not..All%20this%20in%20one%20way%20or%20the%20other%20brings%20out%20the%20most%20common%20factor%20for%20which%20we%20all%20,look%20forward%20to%20n%20that%20is%20food..!..good%20,yummy%20,finger%20licking%20food%20to%20share%20the%20joyous%20moments..right??..:)..So%20I%20am%20here%20with%20a%20great%20starter%20today,which%20will%20make%20you%20crave%20for%20more%20n%20more..:)%20I%20am%20kinda%20in%20n%20out%20of%20blogging%20these%20days,trying%20to%20slow%20down%20things%20a%20bit%20as%20I%20am%20seriously%20starting%20to%20get%20bored%20with%20the%20whole%20thing..mebe%20I%20had%20too%20much%20of%20it..I%20used%20to%20spend%20a%20huge%20chunk%20of%20my%20day%20time%20for%20this%20space%20n%20visiting%20n%20commenting..mebe%20that%20finally%20got%20over%20me..so%20I%20am%20trying%20to%20be%20easy%20right%20now,giving%20more%20time%20for%20sweet%20home,nature%20n%20books%20n%20thats%20why%20you%20miss%20my%20comments%20n%20frequent%20posts..n%20missing%20so%20many%20lovely%20events%20which%20I%20would%20have%20loved%20to%20participate%20in%20as%20well..But%20I%20seriously%20need%20to%20gear%20down..Still%20I%20wouldn't%20want%20you%20to%20forget%20me%20right?%20That%E2%80%99s%20why%20I%20peek%20in%20once-in-a-while,but%20try%20to%20come%20straight%20to%20business%20without%20beating%20around%20the%20bush.:p..Hope%20you%20wont%20mind%20this%20get-over%20period%20of%20mine..:)..n%20thanks%20to%20each%20n%20everyone%20of%20you%20for%20your%20visits%20n%20inspiring%20comments..:)%20So%20what%20are%20your%20plans%20for%20the%20long%20weekend?enjoy%20the%20fireworks?enjoy%20at%20home%20with%20kids?..I%20know%20kids%20are%20having%20their%20hols%E2%80%99%20right%20now,n%20so%20for%20most%20of%20you%20its%20gonna%20be%20a%20hectic%20yet%20gala%20time..Hope%20you%20all%20enjoy%20max..We%20are%20planning%20to%20do%20some%20gamble-shamble%20n%20spend%20some%20relaxing,soothing%20time%20outside%20in%20some%20resort..outa%20all%20the%20hectic%20office/home%20chores..so%20that's%20it%20n%20luckily%20no%20big%20cooking%20for%20few%20days..:D..I%20need%20a%20break%20from%20kitchen%20tooooo..:D%20%20%20So%20for%20those%20who%20are%20looking%20for%20variety%20starters%20for%20their%20guest-welcoming%20big%20menu%20these%20days,here%20is%20a%20spicy%20shrimp%20stuffed%20mushrooms..:)..I%20was%20planning%20to%20make%20this%20since%20God-knows-when..saw%20a%20different%20stuffing%20on%20TV%20show%20long%20back,but%20kept%20on%20procrastinating%20it%20in%20n%20made%20it%20finally%20yesterday..There%20are%20many%20stuffing%20recipes%20out%20there%20in%20internet.I%20have%20taken%20tips%20from%20here%20n%20there%20%20n%20made%20the%20stuffing%20myself.Gave%20it%20an%20Indian%20twist..Remember%20seeing%20some%20amazing%20stuff%20in%20Soma%E2%80%99s%20page%20too..:)%20I%20had%20a%20few%20mushrooms%20in%20hand%20n%20so%20made%20the%20filling%20according%20to%20that..So%20please%20go%20easy%20on%20the%20amount%20of%20ingredients..I%20am%20not%20quite%20sure%20of%20it,as%20I%20made%20a%20small%20portion%20only..some%209-12%20mushrooms..We%20had%20this%20yummy%20starter%20with%20some%20chilled%20Sangria..It%20was%20an%20amazing%20combo..:)%3C/p%3E%3Cp%3EWhat%20I%20did:%20Take%20the%20whole%20mushrooms%20n%20remove%20the%20stem,by%20holding%20it%20n%20rotating%20slightly..It%E2%80%99l%20lsnap%20n%20come%20off%20if%20fresh..Tricky..:P..Chop%20the%20stems%20n%20keep%20aside.%20I%20just%20toasted%20the%20mushroom%20caps%20on%20stove%20top,sprayed%20with%20some%20butter%20flavored%20cooking%20spray,till%20most%20of%20the%20liquid%20is%20evaporated%20n%20they%20are%20slightly%20brown.Toast%20with%20caps%20up%20for%20some%20time%20n%20then%20with%20caps%20down.Sprinkle%20salt%20n%20fresh%20cracked%20pepper%20while%20roasting.Keep%20aside.%20Now%20for%20the%20filling,heat%20EVOO/butter%20in%20a%20pan%20n%20add%201/3%20cup%20of%20sliced%20onions%20n%202%20cloves%20minced%20garlic.Saute%20till%20raw%20smell%20goes..%20Add%20sliced%20chives,chopped%20mushroom%20stems,%201%20tsp%20tomato%20paste%20n%20saute%20for%20a%20while.%20Sprinkle%20salt,pepper%20n%20chilli%20pepper%20flakes.%20Now%20add%20a%20tsp%20of%20chilli%20powder%20n%201/2%20tsp%20Garam%20masala(cloves,cardamom,cinnamon,mace%20,nutmeg).%20Saute%20till%20raw%20smell%20goes.%20Add%201/3%20cup%20of%20small%20shrimp(%20I%20chopped%20up%20large%20raw%20white%20shrimp%20n%20added).n%20saute%20until%20its%20pink%20n%20mixed%20with%20the%20base.%20Sprinkle%20parsley%20flakes%20n%20fresh%20chopped%20cilantro%20n%20switch%20off%20heat.%20I%20then%20added%202%20tsps%20of%20Ricotta%20cheese(you%20can%20add%20cream%20cheese%20n%20spinach%20as%20well),1%20tsp%20mayonnaise%20n%20mix%20well.%20Now%20take%20a%20bowl%20n%20add%202%20tsp%20plain%20bread%20crumbs,2%20tsp%20shredded%20Parmesan%20cheese,1%20tsp%20rough%20ground%20almond,pepper%20powder%20n%20mix%20well.Drizzle%20some%20butter/EVOO%20n%20mix%20well%20to%20get%20a%20crumbled%20consistency.%20Take%20the%20mushroom%20caps,fill%20with%20the%20filling,squeeze%20liberally%20some%20fresh%20lemon%20juice%20on%20top..%20n%20top%20with%20the%20seasoned%20bread%20crumb%20mix.%20Preheat%20oven%20to%20425%20F%20n%20roast%20the%20filled%20mushroom%E2%80%99s%20for%209-10%20minutes,till%20the%20top%20is%20golden%20brown..%3C/p%3E%3Cp%3EYummy%20yet%20healthy%20starters%20are%20ready%20to%20serve%20with%20some%20ketchup/hot%20sauce..:)%20%20%20%20Verdict:%20Great%20combo%20of%20mushrooms%20with%20creamy%20yet%20spicy%20shrimp%20mix..n%20that%20crunchy%20top%20was%20just%20yummyyy.Vegetarians%20can%20skip%20the%20shrimp%20part%20n%20play%20with%20some%20other%20ingredients%20like%20chopped%20spinach/artichoke%20hearts%20etc..We%20just%20forked%20each%20of%20it%20n%20popped%20into%20mouth.Burst%20of%20earthy%20flavors%20n%20cheese%20was%20too%20good..:)..Served%20hot%20from%20oven%20with%20chilled%20Sangria%20n%20that%20was%20one%20of%20the%20best%20starter%20ever..:)%3C/p%3E%3Cp%3EAll%20you%20guys%20have%20a%20great%20great%20time..k?..Have%20%20a%20%20blast..!%3C/p%3E%3Cp%3EHugs%3C/p%3E){kind=link}
