- 1 head Boston or possibly leaf lettuce
- 4 med. cucumbers, sliced
- 4 c. coarsely shredded, peeled, raw beets
- 1/2 c. sliced onions

- Just before serving, line shallow bowl with lettuce, arrange cucumbers over lettuce. Mound beets in center, sprinkle with onions. Serve with dressing.
