- 1 (16 oz.) can of refried beans with green chiles mixed in
- 1 (1 oz.) package of taco seasoning OR 2 tbsp. of homemade taco seasoning
- 1 and 1/4 cups of guacamole
- 1 (8 oz.) container of sour cream
- 3/4 cup of chunky salsa
- 1 cup shredded cheddar cheese
- 1 small can of sliced olives, drained
- 2 green onions, sliced
- Tortilla chips for dipping

%3C/p%3E%3Cp%3EI%20figured%20it%20was%20time%20to%20revamp%20it%E2%80%A6.again.%3C/p%3E%3Cp%3EMajor%20thanks%20to%20Daphne%20over%20at%20The%20Dutch%20Lady%20Designs%20for%20this%20new%20layout!%20%20If%20any%20of%20my%20fellow%20Bloggers%20need%20help%20with%20their%20layouts%E2%80%A6go%20to%20her!!!%20%20She%20was%20VERY%20patient%20with%20me%20and%20never%20scolded%20me%20over%20the%20ten%20billion%20questions%20I%20had%20for%20her.%20%20She%20is%20my%20go-to%20person%20now%20for%20everything%20layout%20wise!%20So%20yes%E2%80%A6please%20go%20to%20her%20if%20you%20are%20considering%20a%20new%20layout%20or%20if%20you%20just%20want%20a%20little%20change%20to%20your%20blog.%20%20She%20does%20everything%20from%20graphics%20to%20complete%20redesigns%20and%20is%20the%20most%20patient%20person%20on%20the%20planet%20;)%20%20Tell%20her%20Libby%20sent%20ya%20;)%3C/p%3E%3Cp%3EOnto%20the%20post%E2%80%A6.%3C/p%3E%3Cp%3EI've%20had%20lots%20of%20time%20to%20do%20more%20soul%20searching%E2%80%A6yet%20again%E2%80%A6and%20came%20to%20these%20conclusions:%3C/p%3E%3Cp%3E*I%20am%20definitely%20meant%20to%20just%20be%20a%20home%20cook%20and%20to%20keep%20writing%20about%20food%3C/p%3E%3Cp%3E*I%20am%20LOVING%20being%20home%20again%20with%20my%20family%3C/p%3E%3Cp%3Eand%20the%20last%20one%E2%80%A6.%3C/p%3E%3Cp%3E*I%20am%20completely%20over%20the%20moon%20and%20ecstatic%20to%20share%20recipes%20such%20as%20this%20next%20one%E2%80%A6%E2%80%A6%3C/p%3E%3Cp%3ESince%20our%20big%20move%20to%20the%20southwest%20a%20few%20years%20ago,%20we%20have%20fallen%20in%20love%20with%20the%20food%20in%20this%20area!%20I%20kid%20you%20not,%20whenever%20I%20make%20our%20weekly%20menus,%20everyone%20always%20requests%20a%20mexican/new%20mexican%20dish%20of%20some%20sort.%3C/p%3E%3Cp%3EI'm%20still%20learning%20the%20ins%20and%20outs%20of%20southwest%20cuisine,%20however,%20this%20does%20not%20stop%20me%20from%20finding%20recipes%20that%20we%20can%20make%20at%20home%20that%20remind%20us%20of%20our%20time%20here.%20%20Plus,%20as%20much%20as%20I%20love%20eating%20out,%20it's%20much%20cheaper%20to%20make%20certain%20dishes%20at%20home.%3C/p%3E%3Cp%3EThis%20recipe%20was%20discovered%20during%20the%20time%20I%20was%20in%20culinary%20school.%20%20Ava%20(my%20daughter),%20wanted%20a%207%20layer%20dip%20to%20go%20along%20with%20our%20enchiladas.%20%20I%20found%20this%20recipe%20and%20decided%20to%20make%20it%20new%20mexican%20style%20and%20add%20green%20chiles%20to%20the%20mix.%3C/p%3E%3Cp%3EIt%20worked%20;)%20%20I%20have%20made%20this%20dip%20five%20times%20since%20discovering%20it%20and%20every%20single%20time,%20Ava%20has%20asked%20me%20when%20I%20was%20putting%20it%20on%20the%20blog.%20%20Well,%20she%20doesn't%20have%20to%20wait%20anymore%20because%20it's%20here%20;)%3C/p%3E%3Cp%3ESeven%20Layer%20Green%20Chile%20Dip%3C/p%3E%3Cp%3E(serves%208-10)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20%20In%20a%20small%20bowl,%20mix%20together%20the%20refried%20beans%20and%20the%20taco%20seasoning%20until%20well%20combined.%3C/p%3E%3Cp%3E2.%20%20Spread%20the%20mixture%20evenly%20into%20the%20bottom%20of%20a%209-inch%20deep%20dish%20pie%20plate.%3C/p%3E%3Cp%3E3.%20%20Spread%20the%20guacamole%20evenly%20over%20the%20top%20of%20the%20beans.%3C/p%3E%3Cp%3E4.%20%20Spread%20the%20sour%20cream%20over%20the%20guacamole.%3C/p%3E%3Cp%3E5.%20%20Drain%20any%20excess%20liquid%20with%20a%20slotted%20spoon%20from%20the%20salsa%20and%20spread%20it%20on%20top%20of%20the%20sour%20cream.%3C/p%3E%3Cp%3E6.%20%20Sprinkle%20the%20cheese%20evenly%20over%20the%20salsa.%3C/p%3E%3Cp%3E7.%20%20Top%20with%20sliced%20olives%20and%20green%20onions.%3C/p%3E%3Cp%3E8.%20%20Cover%20the%20pie%20plate%20with%20saran%20wrap%20or%20aluminum%20foil%20and%20place%20in%20the%20fridge%20for%202%20hours.%3C/p%3E%3Cp%3E9.%20%20Serve%20with%20tortilla%20chips.%3C/p%3E%3Cp%3E**Libby's%20Notes:%20%20Not%20a%20big%20fan%20of%20green%20chiles?%20%20Use%20regular%20refried%20beans%20instead.%3C/p%3E%3Cp%3ERecipe%20Source:%20%20From%20the%20blog,%20Life%20in%20The%20Lofthouse.%20%20Original%20recipe%20can%20be%20found%20here.%3C/p%3E){kind=link}
