Before we get to the recipe…I just wanted to announce that the blog received another make over ;)
I figured it was time to revamp it….again.

Onto the post….
I've had lots of time to do more soul searching…yet again…and came to these conclusions:
*I am definitely meant to just be a home cook and to keep writing about food
*I am LOVING being home again with my family
and the last one….
*I am completely over the moon and ecstatic to share recipes such as this next one……
Since our big move to the southwest a few years ago, we have fallen in love with the food in this area! I kid you not, whenever I make our weekly menus, everyone always requests a mexican/new mexican dish of some sort.
I'm still learning the ins and outs of southwest cuisine, however, this does not stop me from finding recipes that we can make at home that remind us of our time here. Plus, as much as I love eating out, it's much cheaper to make certain dishes at home.
This recipe was discovered during the time I was in culinary school. Ava (my daughter), wanted a 7 layer dip to go along with our enchiladas. I found this recipe and decided to make it new mexican style and add green chiles to the mix.
It worked ;) I have made this dip five times since discovering it and every single time, Ava has asked me when I was putting it on the blog. Well, she doesn't have to wait anymore because it's here ;)
Seven Layer Green Chile Dip
(serves 8-10)
Ingredients:
- 1 (16 oz.) can of refried beans with green chiles mixed in
- 1 (1 oz.) package of taco seasoning OR 2 tbsp. of homemade taco seasoning
- 1 and 1/4 cups of guacamole
- 1 (8 oz.) container of sour cream
- 3/4 cup of chunky salsa
- 1 cup shredded cheddar cheese
- 1 small can of sliced olives, drained
- 2 green onions, sliced
- Tortilla chips for dipping
Directions:
1. In a small bowl, mix together the refried beans and the taco seasoning until well combined.
2. Spread the mixture evenly into the bottom of a 9-inch deep dish pie plate.
3. Spread the guacamole evenly over the top of the beans.
4. Spread the sour cream over the guacamole.
5. Drain any excess liquid with a slotted spoon from the salsa and spread it on top of the sour cream.
6. Sprinkle the cheese evenly over the salsa.
7. Top with sliced olives and green onions.
8. Cover the pie plate with saran wrap or aluminum foil and place in the fridge for 2 hours.
9. Serve with tortilla chips.
**Libby's Notes: Not a big fan of green chiles? Use regular refried beans instead.
