- 2 Tbsp. Sesame seeds
- 12 ounce Dry buckwheat noodles (fancy soba)*
- 4 Tbsp. Peanut oil
- 1 Tbsp. Oriental sesame oil
- 6 Tbsp. Seasoned rice vinegar*
- 12 ounce English hothouse cucumber, seeded, shredded
- 8 ounce Carrots, peeled, shredded
- 6 lrg Radishes, trimmed, sliced
- 3 x Green onions, thinly sliced

- *Buckwheat noodles and seasoned rice vinegar are available at Asian markets and in the Asian section of some supermarkets.
- Toast sesame seeds in heavy small skillet over medium-low heat. Cold.
- Cook noodles in pot of boiling salted water till just tender but still hard to bite, about 8 min. Drain. Rinse noodles under cool water till cold. Drain well; transfer to large bowl. Add in both oils and toss to coat.
- Mix vinegar and all other ingredients into noodles. Season with salt and pepper. Sprinkle with sesame seeds and serve.
