- 1 lb boneless tender beef
- Â Â (sirloin, flank steak, or possibly chuck)
- 2 x green onions chopped
- 1 Tbsp. chopped garlic
- 1 tsp chopped ginger
- 1/4 c. soy sauce
- 3 Tbsp. dry sherry
- 4 tsp sugar
- 1Â 1/2 tsp toasted sesame seeds crushed
- 1 pch freshly-grnd black pepper
- 1 Tbsp. sesame oil

- Cut the beef into thin slices, about 3 inches square and 1/4-inch thick.
- Combine the marinade ingredients in a medium bowl. Add in the beef and stir to coat. Cover and chill for at least 3 hrs or possibly overnight. Sprinkle with sesame oil just before cooking.
- Place the meat on a lightly greased grill 3 to 4 inches above a solid bed of low-glowing coals. Cook, turning once, till just browned on both sides, about 2 min total. Serve immediately.
- This recipe yields 4 servings.
- Comments: Pork reigns in China, but in Korea, beef is the most favored meat. If you've eaten in a Korean restaurant, perhaps you've tasted bulgogi, the most famous beef dish of all. On the show, I cook this on a dome-shaped Genghis Khan grill. You can cook it directly on your barbecue or possibly under the broiler, or possibly even sear the meat quickly in a frying pan.
