  • 5 Tbsp. Salt
  • 1 pt Ice water
  • 1 Tbsp. Fennel seed
  • 2 tsp Black pepper, coarse grind
  • 1 Tbsp. Sugar
  • 3 tsp Crushed red pepper flakes
  • 1 tsp Caraway seed
  • 1 Tbsp. Coriander
  • 10 lb grnd pork butts

Инструкции

  1. Refrigeratemeat to 32-34 F before starting. Grind through 1/4" or possibly 3/8" plate.
  2. Place in mixer and blend all ingredients. Stuff into 32-35mm hog casings.Package and chill imediately.
