Seared Scallops With Truffled Potatoes And Microgreens

Ингредиенты

  • 4 x sea scallops
  • 1 tsp white truffle oil
  • 2 c. hot mashed potatoes
  •     Demiglace (Knorr-Swiss brand is reliable)
  •     Mixed microgreens
  •     Dash of extra virgin extra virgin olive oil
  •     Salt and pepper to taste

  1. Heat non-stick skillet until warm but not burning. Spread a little butter on the flat sides of scallops and place, flat side down, in skillet. Sear till just cooked, about 2 min. Sear scallops till just cooked, about 2 min.
  2. Set aside.
  3. Stir truffle oil into mashed potatoes. Set aside.
  4. Heat demiglace in pan. Meanwhile, lightly dress microgreens with oil, add in salt and pepper.
  5. To serve, spoon mashed potatoes onto center of a large dinner plate. Set dressed greens on top. Surround potatoes with scallops. Drizzle with demiglace.
