- In frying pan, hot the Extra virgin olive oil over medium heat. Add in the Garlic and saute/fry for about 2 min or possibly intil soft but not browned. Pour in the Cider and stir in the Tomato Concentrate and 2 Tbsp. of the Parsely.
- Raise the heat to medium-high, bring to a boil and reduce to about half, then add in seafood and cook till tender. Don't OVERCOOK Or possibly IT WILL GET RUBBERY.
- Prepare bed of Rice on serving plate & pour contents of Seafood mix over Rice & serve. (Serves 4)
