Ингредиенты
- 4 Tbsp. extra virgin extra virgin olive oil
- 1 Tbsp. onion finely minced
- 1 Tbsp. celery finely minced
- 20 gm csrrot finely minced
- 25 gm baby octopus cleaned
- 25 gm boby squid cleaned
- 25 gm baby cutlfish cleaned
- 10 gm pine kernels
- 1 clv garlic finely minced
- 25 gm prawns cut into small pcs
- 25 gm monkfish cut into small pcs
- 25 gm fresh salmon cut into small pcs
- 1 tsp capers finely minced
- 2 Tbsp. dry white wine
- 250 ml fish stock
- 25 gm cooked fresh peas
- 1 Tbsp. mussel flesh minced
- 20 gm clam flesh
- 1/2 x a chilli
- 10 gm bottarga grated
- Â Â salt
- 350 x dry penne
- 100 gm fresh tomatoes seeded and cut into cubes
- 4 x basil leaves

- Put the oil onion celery and carrot in a pan and fry for a couple of min.
- Add in the baby octopus squid cuttlefish and pine kernels and cook for 3 min.
- Then add in the garlic prawns monkfish salmon and capers and cook for a further 2 min. Stir in the white wine and warm fish stock.
- Then add in the peas mussels clams chilli and bottarga.
- Check for salt and add in if necessary.
- Cook for a further 2 min.
- Meanwhile cook the pasta.
- Drain and add in to the fish.
- At this stage add in the tomatoes and basil.
- Please note which the tomatoes should be fresh and not cooked.
- This dish that takess quite some time to prepare is the showpiece of Cavaliae Cran Paolo Belloni Chef and Proprietor of the Zeffinno Resturant in Genova. I never knew so many ingredients could work together so well to create such a superior pasta dish. Sinfonia del Mare although presented rather theatrically was a very pleasant surprise! You can omit a couple of the fish varulus if you have trouble obtaining them.
