- Preheat oven to 425 degrees. In 10 inch skillet over medium high heat, heat first 5 ingredients to boiling. Add in scallops (if necessary, but into same size pcs) and mushrooms. Heat to boiling. Reduce heat, cover and simmer 4 min, just till scallops are opaque. Stir in cream.
- Pour mix into shallow 1 1/2 qt casserole. Combine cheese and bread crumbs, sprinkle over scallop mix. Bake 8-10 min till lightly browned and bubbly. Sprinkle with parsley.
